Egg is an important source of animal protein and is popular with consumers.At present,fresh egg has become a major commercial egg supply in the form of the city.Compared with the traditional soil egg,fresh egg more perishable products circulation.The effect of different coating packaging and storage temperature on the quality of egg during shelf life was studied in this experiment.According to the dynamic change of quality index,the shelf life prediction model of chitosan coated eggs was established.The results are as follows:1 The effect of eggshell stoma on the quality changes of eggs during storage was studied.The results showed that the increase of eggshell porosity and the increase of egg number could accelerate egg spoilage and shorten shelf life.2 Different coating preservation of egg during storage quality change results:egg quality changes slowly after coating,coating is no longer than the egg shelf life,and the preservation effect of pullulan film,chitosan membrane,without coating.3 Effects of storage temperature on egg quality changes of the results of the study show that:low temperature can reduce egg spoilage rate,prolong the shelf life of the egg,the egg storage under the condition of 5℃ to fifty-fourth days still kept to AA level freshness,and the temperature of 35℃ for 11 d storage.4 A film egg Physicochemical Quality Prediction Model and the results show:the research on egg quality,gas chamber diameter and egg yolk coefficient by using the statistical software fitting data after the establishment of egg physicochemical quality change prediction model,after verification,the predictive value of the fitting curve and the measured value is better,the average relative error of P was less than 10%,said the forecast the model equation can easily describe the dynamic relationship between each index and temperature.5 The prediction model and the results show on the shelf life of egg:according to the analysis of correlation between quality indexes and egg Pearson Haugh unit values,the prediction model of chitosan coating based on the shelf life of egg yolk coefficient as the standard,the average relative error is less than 10%,indicating the egg shelf life prediction model based on coefficient of variation of egg yolk is feasible.6 The shelf life allowance of chitosan coated eggs was calculated by shelf life prediction model.The shelf life of chitosan coated eggs under different temperature storage conditions was obtained,which provided the basis for business decision making. |
