In this paper,the storage time of three kinds of common vegetables which can be effectively extended,such as Cherry tomato,Soybean pods and Leek shoots,and the effective cleaning agent to maintain its quality are selected.We choose sodium hypochlorite,chlorine dioxide,salicylic acid,hydrogen peroxide and peroxy acetic acid to screen the better cleaning agent,and the better concentration of each cleaning agent.The results of cherry tomato experiment showed that the best cleaning effect for cherry tomato was Na Cl O solution with effective chlorine concentration of 100 mg/L,which could significantly reduce the microbial populations,the browning degree and the soluble solids contentduring storage period,and have no effect on the hardness of cherry tomato,and can be effectively extended the storage time.The results of soybean pods cleaning experiment showed that thesterilization of different cleaning agents was different after cleaning.The cleaning effect of thesolution of104 mg/L Cl O2was same with the solution of 250 mg/L Na Cl O,but the electrolyte leakage rate of the soybean pods was significantly reduced after the high concentration cleaning of Cl O2,and the safety was reliable,so the Cl O2solution of 104 mg/L was the best clean agent.The experimental results of Leek shoots showed that hydrogen peroxide could inhibit the microorganism significantly and retain its sensory level.The optimal cleaning concentration in the hydrogen peroxide cleaning group was 35 mg/L,and peroxy acetic acid was also an effective cleaning agent for the cleaning of leek yellow,but the concentration was greatly influenced and the high concentration of peracetic acid would be reduced the quality of Leek shoots.The optimum cleaning concentration of peroxy acetic acid is 200 mg/L,and the cleaning effect of salicylic acid is weaker than hydrogen peroxide andperoxy acetic acid,and the effect on the fresh-keeping effect is less.The two kinds of cleaning agents except salicylic acid can make the storage time of reach to 5 days at normal temperature. |
