Agaricus bisporus is rich in nutrition and with unique flavor,which make it the most popular among the edible fungus,with the largest cultivating and consuming amount around the world.However,the edible part of A.bisporus has high water content,and there is no significant protective tissue in the outer skin.It is easy to lose water and suffer mechanical damage during the process of postharvest transportation,which leads to browning and decay,and ultimately reduces the edible quality and commodity value.In this study,A.bisporus was used as the experimental material,the effects of different vibration time and frequency on the storage quality of A.bisporus were investigated by simulating the transportation vibration.On this basis,the effective cushioning packaging was developed,and the vibration reduction effect on A.bisporus was studied,which provided a useful exploration for reducing the vibration damage of A.bisporus during transport.The results are as follows:(1)The effect of different vibration time on the storage quality of A.bisporus was studied.The results showed that the longer the vibration treatment time,the worse the storage quality of A.bisporus.After 15 days of storage,the L*value of control group(non-vibration treatment group),8 h,16 h and 24 h vibration treatment groups decreased from 91.76 to 80.80,75.76,74.95 and 71.49,respectively.The longer the vibration treatment time,the browning degree was more serious.The contents of total phenol,V_C,GSH and the activities of SOD,CAT,APX,GR and other antioxidant enzymes also increased with the vibration treatment time.The correlation analysis of the main storage quality indexes showed that most of the antioxidant and browning related indexes were significantly correlated,indicating that the browning and antioxidant capacity of A.bisporus were closely related,and the antioxidant capacity of A.bisporus could be maintained through appropriate preservation technology,so as to reduce the impact of vibration stress on its quality.(2)The effects of different vibration frequencies on the storage quality of A.bisporus were studied.The results showed that the higher frequency of vibration treatment in low frequency range,the worse storage quality of A.bisporus.After 15 days of storage,the L*value of control group(non-vibration group),1.67 hz,2.5 hz and 3.33 hz vibration groups decreased from 91.01to 83.32,74.13,73.93 and 69.74 respectively,the total phenol contents decreased from 4.18μmol/g to 2.53μmol/g,2.21μmol/g,2.15μmol/g and 1.47μmol/g,and the SOD activities decreased from 3.04 U to 2.49 U,2.07 U,1.93 U and 1.62 U respectively.Within the low frequency range,the higher the frequency of vibration treatment,the more serious the browning degree of A.bisporus,the faster the consumption of non-enzyme antioxidants(such as total phenol,Vc and GSH),and the faster the activities of antioxidant enzymes(such as SOD,CAT,APX and GR)decreased.In the actual transportation,the vibration frequency of A.bisporus should be reduced as much as possible.(3)The results showed that after 15 days of storage,the L*value of special cushioning packaging group,ordinary cushioning packaging group and non-cushioning packaging group were decreased from 90.32 to 75.15,70.62 and 66.45,respectively,the total phenol contents decreased from 4.31 mmol/g to 2.51 mmol/g,2.05 mmol/g and 1.60 mmol/g respectively,and the CAT activities decreased from 8.15 U to 6.16 U,5.49 U and 5.04 U respectively,Cushioning packaging can effectively reduce the mechanical damage of A.bisporus during the process of transportation,and the special cushioning packaging developed in this study showed better vibration reduction effect than ordinary cushioning packaging,which can be applied in the actual logistics transportation...
