Study On The Anti Hyperlipidemia Function Of Whey Beverage And Its Industrialization

Whey is a by-product of cheese production,whichcontains the soluble components of fresh milk,and its nutrition is more than 50% of fresh milk.At present,whey is mostly used in the production of whey powder,whey protein and lactose at home and abroad,but its utilization rate is not high.Therefore,in this paper,whey was used as raw material to prepare two kinds of whey beverage with seabuckthorn flavor and original flavor.The main research contents are as follows: 1)the formula of seabuckthorn whey beverage: the amount of freezedried sea buckthorn powder is0.4%,the amountof yogurt powder flavor is 0.8%,the amount of citric acid is 0.25%,the amount of sucralose is 0.016%;the formula of original whey beverage is: the amount of DL-malic acid is 0.08%,the amount of yogurt powder flavor is 0.6%,the amount of citric acid is 0.06%,the amount of sucralose was 0.008%.Carboxymethyl cellulose sodium was selected as stabilizer,and the dosage was 0.1%.In order to keep the flavor of the product unchanged,the product can be stored for three months at room temperature after pasteurization at 95℃.2)Using hyperlipidemia animal model method,Wistar rats were used as experimental animals,and simvastatin was used as positive control group.The hypolipidemic effects of sea buckthorn Whey Drink and original Whey Drink were studied.The results showed that the two whey drinks could significantly increase the content of HDL-C in serum,significantly reduce the content of LDL-C and Chol in serum,and had the effect of lipid-lowering.The pathological section of liver also showed that the liver of hyperlipidemia rats in the treatment group had different degrees of improvement.3)The production plan,material,energy and equipment of the whey beverage factory,which processes 20 tons fresh whey every day,are calculated.And the production cost and sales revenue are roughly estimated.The total investment of the project is 8.5 million yuan,the estimated annual cost is 20.0568 million yuan,the annual net profit of the enterprise is 6.3174 million yuan,and the net profit rate is 22.18%.Therefore,the project is a low-risk investment.
