Alkyl polyglycoside is a new type of non-ionic surfactant,which has various advantages such as low surface tension,high activity,strong decontamination ability,small irritation to skin,easy biodegradation and compatibility to the environment.APG(Alkyl Polyglycoside)is applied in many fields such as detergent,cosmetics,food,medicine,plastic and biochemistry.Natural vitamin E has the antioxidant property of scavenging free radical chain reaction,and its biological activity is much higher than that of artificial vitamin E.Natural vitamin E is widely used in food,medicine,health care products,cosmetics and other fields,so it has a good market prospect.In this paper,the optimal emulsification conditions of alkyl glycosides were determined by the determination of HLB Number,emulsification temperature,emulsification time and the percentage of Tween 80.Then,according to the emulsification characteristics of alkyl polyglycoside,the optimum formula and process of alkyl polyglycoside emulsification of natural vitamin E were determined by Turbiscan,particle size distribution and centrifugation.Finally,natural vitamin E emulsion was applied in acidified milk beverage and reconstituted milk containing DHA to test its antioxidant properties.The detailed results were described as follows:(1)The HLB Number of APG1214 was between 11.79 ? 12.86.The optimum conditions were: emulsification temperature is 95?,treatment time is 60 min.The emulsion stability was best when the ratio of Tween 80 to APG1214 was 3:2.(2)The emulsifier was dissolved in hot water at 70? ? 75?,then the natural vitamin E preheated to 65? ? 80? was added into the system,stirred for 60 minutes,and homogenized for 3 times by high-pressure homogenizer.The effects of emulsifier dosage,homogeneous pressure and homogeneous temperature on the emulsification of natural vitamin E were studied by using this method as the emulsion preparation method.It was found that the optimal formula and process of natural vitamin E emulsion are: emulsifier dosage was 3.0%,homogenization pressure was 30 MPa,homogenization temperature was 75?.(3)By analyzing the Peroxide value of the model product,it was found that the natural vitamin E emulsion had a good antioxidant ability.Through flavor taste experiment,it was proved that natural vitamin E emulsion had a remarkable protection to oily raw materials such as DHA against oxidation.The results exhibited that alkyl polyglycoside had a good emulsification property,and natural vitamin E emulsion emulsified with APG had a good oxidation resistance.This paper may provide a new strategy for the better application of natural antioxidants.
