| Rose is a flower that has the functions of ornamental,medicinal,and edible.The development and utilization of the functional ingredients of roses,especially the flower residue after refined essential oil has been a research hotspot in recent years,but the current development and utilization of the rose residue is not deep enough.Therefore,in this paper,rose dregs were taken as the research object to study the extraction process of flavonoids and anthocyanins,research and development of rose instant tea,objective to study the stability of rose anthocyanin and preparation of anthocyanin microcapsules for color protection.The specific results of the study include:(1)Optimization of Ultrasonic-Assisted Extraction process for flavonoids from Rosa rugosa by Response Surface Methodology.The flavonoids yield was used as the index,The best extraction technology of flavonoids is:Ultrasonic power 500W,50℃,76min,ethanol concentration 60%,solid/liquid ratio 1:26g/m L,The flavonoids yield was37.7mg/g.The cumulative relative rate of the twice extraction was 93.93%.Compared with Static Extraction,Water Bath Extraction,Oscillation Extraction and Magnetic Stirring Extraction,Ultrasonic-Assisted Extraction is the most efficient and time-saving.(2)Study on the preparation of rose instant tea.Concentration of flavonoids of rose by rotary distillation,freeze drying and pulverize evenly,powder yield 26%.This powder is instant tea,it has good instant solubility(it sinks into water in 2 seconds,and there is no obvious dust after dissolution).The preparation of rose hydrosol dissolving instant tea increased the aroma of instant tea and made up for the lack of aroma.The value of rose components was comprehensively utilized.(3)Optimization of Ultrasonic-Assisted Extraction process for anthocyanin from Rosa rugosa by Response Surface Methodology.The anthocyanin yield was used as the index,The best extraction technology of anthocyanin is:Ultrasonic temperature 50℃,82min,citric acid concentration 30%,solid/liquid ratio 1:91g/m L,The anthocyanin yield was2.51mg/g.The cumulative relative rate of the twice extraction was 91.37%.(4)Study on the stability of rose anthocyanin.The anthocyanin extract was treated with p H,light,temperature,metal ions,oxidants,reducing agents,sugars and additives.The results show that anthocyanins’stability needs p H≤3,Avoid light,Avoid high temperature above 60℃,Avoid contacting Sn2+,Cu2+,Fe2+,Fe3+metal ions,Avoid contact with Na2SO3and H2O2,High concentration of sucrose,glucose,fructose,maltitol,arabinose and ascorbic acid will destroy the stability of anthocyanins for a long time,while,On the contrary,High concentration of malic acid,tartaric acid,potassium sorbate and sodium benzoate can maintain the stability.(5)Study on the preparation of rose anthocyanin microcapsule by orthogonal optimization of sharp hole method.The embedding rate of anthocyanin was used as the index,the best preparation process of microcapsules is:sodium alginate concentration2%,sharp hole diameter0.7mm,core/wall ratio1:12,calcium chloride concentration 3%,chitosan concentration 0.4%,the embedding rate of anthocyanins was 92.86%.The microcapsules of anthocyanin were treated by different p H,light,high temperature,4kinds of metal ions,oxidants and reducers,It’s obvious that microcapsules improved the retention rate of anthocyanins.Rose hydrosol was prepared and used in microcapsules to cover up the odor of sodium alginate.The microcapsules contained both anthocyanins and rose fragrance. |
