Food is not only the most basic guarantee to maintain human function,but also the food culture,table manners,religious taboos,hierarchical identity,etc.,which enriches the spiritual world of human beings.Through the window of food,we can better understand how local people use local materials to create unique food,which gradually develops into people’s regional identity.In the process of eating,how do people add culture layer by layer to food,endow it with more symbolic meaning,and even achieve psychological identity through this "thing" ?Chinese civilization is three thousand years,millet domestication as early as the Neolithic Age,has a history of nearly ten thousand years ago.Shanxi has always been the cradle of human civilization.Its geology and landforms are riddled with ravines,which also provide natural fertile soil for the growth of millet.Shanxi people not only love to eat food with vinegar,but also love to eat millet.Qin county as the field of this study is to point to this state yellow millet as the research object,from the perspective of overall dietary anthropology theory,mainly using the field investigation and research method of combining literature research,seeps the state as a representative of the shanxi millet huang for historical trace,cultural interpretation,and ultimately achieved regional identity.The introduction part mainly includes the origin of the topic,research status and research methods.Through a review of the research on dietary anthropology at home and abroad,it is found that food as an intermediary to explore the cultural nature behind ethnic groups has become the norm.Anthropological researches on millet are mostly focused on Taiwan,while scholars in Chinese mainland have relatively few achievements from the perspective of anthropology.Starting from this research perspective,this paper takes millet as a medium to explore the local culture and identity behind it.The first chapter is a summary of the field points.First of all,the overall situation of Shanxi Province is introduced,and then understand the Shanxi region millet planting situation.Secondly,it introduces the first destination of the field trip--Qinxian County,Shanxi Province.It also introduces the historical evolution of Qinxian County and what we have seen,heard and thought when we first arrived in the field.Finally,the origin of Qinzhouhuang-Tanshan Village,introduced the current situation of Tanshan Village,the origin of the village name and legends.The second chapter mainly combs the history of millet.The first is the history of millet in China,including the time and place when millet was first domesticated and the process of its spread.The second is the history of millet in Shanxi,from the earliest traces of human activities to the spread of Shennong teaching cultivation and grain to the excavation of archaeological relics in the later period,to trace the origin of millet in Shanxi and its development and changes in different dynasties.Finally,the author’s final field point--the history of Tanshan Village and the related legends of Qinzhouhuang.The third chapter mainly shows the social life history of millet from three aspects: planting,eating and processing.In different stages,it reflects the local knowledge of local people and the role of millet in social change.In the process of social development,people endow millet with different cultural meanings and different cognition of millet.The fourth chapter mainly analyzes how Qinxian people achieve an identity through the medium of millet.Starting from the daily habits of life,it reflects that the wandering people reach the interpretation of local identity by missing the millet porridge in their hometown.The importance of millet to local people is reflected through the dietary structure that local people cannot live without millet for three meals a day,and how outsiders form physical dependence on millet after immigrating to the local area.Through physical discomfort and psychological cognition to achieve a kind of local culture and identity of Qinxian people.
