| Objective:To grasp the hygienic status of the centralized disinfection service industry of tableware in Jiangxi Province and the sanitary quality of centralized disinfection tableware through investigation.It can provide scientific basis for strengthening hygiene supervision.According to comprehensively evaluate the overall status of the sanitation of the centralized disinfection service industry of tableware in 11 cities of Jiangxi Province,to know the hygienic ranking and classification of the centralized disinfection service industry in various regions.To finding out the weakness of each region,and propose countermeasures in a targeted manner.Methods:On the basis of literature research and expert evaluation,the questionnaire and comprehensive evaluation indicators of Tableware Central Disinfection Service Unit were drawn up.Using the general investigation method,166 licensed tableware centralized disinfection service units in Jiangxi Province were carried out.Randomly select 492 employees on site to conduct health literacy surveys.In accordance with "GB14934-2016 National Food Safety Standard Sterilized Meal(Drinking)Utensils",conduct product sampling inspections for each disinfection unit.All surveys and samples were completed by trained investigators.Carry out comprehensive evaluation with weighted rank sum ratio method.Results:The centralized disinfection units of tableware in Jiangxi Province were mainly small and medium-sized private units.The main problems in the field sanitation were as follows.In terms of the environment and layout of the plant area,the environmental hygiene in the plant area was severe,with a qualified rate of only36.75%.In terms of the hygiene of the production area,the problem of the materials used in the workshop decoration was outstanding,with a qualified rate of 57.83%.In the sanitary facilities,the configuration of the three-guard facilities,the changing rooms in the workshop and the second changing rooms was relatively poor,with the qualification rate being 68.07%,57.83% and 58.43% respectively.In terms of the equipment,full automation of production equipment needed to be improved.The current rate of full automation was 60.24%.Inspection equipment allocation rate was only 30.72%.The main problems of material management were in the finished warehousing and transportation links.It was difficult to maintain the environmental sanitation of the workshop in the production process,with the qualified rate only40.36%.There were many problems in the management of sanitary quality,the qualified rate of production records,self-inspection and batch-by-batch inspection were 37.35%,21.69% and 54.22%,respectively,awareness was only 57.32%.In2020,the qualified rate of sampling inspection of centralized disinfection tableware in Jiangxi Province was high,and the unqualified indexes were mainly anionic synthetic detergent and coliform bacteria.The results of the comprehensive health evaluation of11 food and consumer units in cities divided into districts were as follows: City I and city G were rated as upper,city B,city J,city A,city E,city F,city D,city K,city C were rated as medium,city H was rated as below.Conclusion:In 2020,the qualified rate of sampling inspection of products from centralized disinfection service units of tableware in Jiangxi Province was high,but the health situation on the spot was not optimistic.A new cooperation mechanism should be set up,laws and regulations should be revised and improved,and the ability of supervision and law enforcement should be enhanced.We should focus on strengthening the management of hygiene in production areas,improvement of production equipment,ex-factory inspection and hygiene of employees.According to the comprehensive evaluation ranking classification and the eligibility of the indicators,the 11 cities should identify the outstanding problems and focus on supervision. |
