| The wine grape of our country has reached one million ba,it will produce 4%-7%of the grape seed.In this study,for the fundamental principle of possible improving utilization ratio and fully exploit the potential of grape seed,the absorptive experiment of simulating gastrointestinal tract was carried,with supermicro powder of grape seed which has different grinding time and temperature as raw material.The grinding time and temperature show relationships with the active component、the antioxidant power、diameter and absorption of simulating gastrointestinal tract,in addition,the relationships between the diameter and antioxidant power under the the absorptive experiment of simulating gastrointestinal tract was investigated.It would supply new approaches for rational development and utilization of grape seed,as well improve the spin-off.The results as follows:(1)Under the ultrafine powder of grape seed,with grinding time extended,D(0.5),which is particle size of ultrafine powde,of 50%,descend and keep stable;With crushing temperature decreased,particle size of ultrafine powde,about 50%,decreased gradually.It illustrated that we can reduce the diameter of super-fine powder through the crushing time extended;Proper decrease in crushing temperature was helpful to rise at a rate proportionate to fine particles.Minimum diameter of ultrafine powde,of 50%,under the treatment of-30℃ and 15min,is 42.916μm.(2)With grinding time extended,the content of tannin or total polyphenol decreased in generally;As temperature drops,the content of tannin or total polyphenol revealed a general trend of increase.It showed that cryogenic pulverization was effective in preserving tannin and total polyphenol in grape seed;There was their maximum about tannin and total polyphenol—107.4mg and 141.5mg respectively,under the treatment of-30℃ and 45min.Under the ultrafine powder of grape seed,with grinding time extended,scavenging capability to DPPH and ABTS both decreased in generally;With crushing temperature decreased,scavenging capability to DPPH and ABTS overall assumes the trend of escalation.Scavenging capability to DPPH has a maximum value of 105.715mg under the treatment of-30℃and 45min;Scavenging capability to ABTS has a maximum value of 62.31 mg under the treatment of-30℃ and 45 min.(3)Bio-accessibility of tannin、total polyphenol、scavenging capability to DPPH and ABTS was 9.31-10.13%、32.8-41.88%、34.3-42.3%and 25.4-41.1%respectively.Whether extending grinding time or decreasing crushing temperature,tannin and total polyphenol revealed a general trend of increase.It revealed the smaller particle of ultrafine powder the higher digesting efficiency is,in addition,cryogenic pulverization was effective in preserving active component.With grinding time extended,scavenging capability to DPPH and ABTS in digestive juice showed a tendency for increasing overall;With crushing temperature decreased,scavenging capability to DPPH and ABTS in digestive juice revealed a general trend of increase.The smaller particle of ultrafine powder,the higher digesting efficiency and the stronger scavenging capability. |
