In recent years,food safety incidents happened frequently in China under the background of economic globalization,which affects not only the healthy of customers but also the development of Chinese food industry seriously and deal a blow to import and export trade in our country.Catering is a very important part of food supply chain since it is the terminal of whole chain.To improve the food safety of catering and guarantee the life safety of customers,this survey investigated food safety situation of catering in Yangling area,which can supply scientific data to make food safety strategies and regulations in this area.Health supervision submissions,Site inspection records,Catering quantitative grading scale and other related materials issued by Yangling Food and Drug Administration during 2010 to 2012 were collected at first place.Then combining the data of investigation in the restaurants to analyze the food safety state of catering in Yangling,the status of catering quantitative grading scale and food safety situation of school canteen.The methods used in this study were documentary research and experts interviews.The management strategies were put forward from three aspects:supervisors,customers and practitioner.In detail,supervisors can develop issuing process of the catering service license according to professional technology;customers should be encouraged to join the supervising,legislation and revised meeting,to make sure information and resource can be shared without any problem;HACCP system can be used in catering management,this paper showed how to do the training,procedures of applying HACCP system and specifying HACCP for catering;At the end,catering standardization system was preliminary developed which mainly included operation principle,menu standardization,raw material purchasing,service quality.For the situation of catering quantitative grading scale,some reform suggestions were put forwarded,for example,improving the degree of publicly displayed,supervisory and promotion.For the situation of school canteen,it is necessary to improve the hardware,strengthen the realization of people who are responsible to food safety management and enhance the training and promoting of food safety knowledge.
