Zinc deficiency is a common problem among people in many poor regions of the world.Zinc deficiency has become a public problem in China and many developing countries.In this study,Eucheuma was used as a raw material to prepare zinc-sulfated oligosaccharide.Animal experiments were conducted to study the effects of zinc-sulfated oligosaccharide on growth and antioxidation of mice.Metabolomics analysis of serum and liver of mice was also studed by LC-MS analysis.The main conclusions are as follows:(1)The best condition of oligosaccharide and zinc mass ratio,PH,time and temperature on the preparation of zinc-sulfated oligosaccharide was 5:1,6.0,1h and 50℃ respectivly.In the infrared spectrum,carbonyl and hydroxyl groups of the oligosaccharide sulfated shift after the reaction.In the XRD spectrum,some of the strong peaks vanishe when the oligosaccharide sulfated cooperated with zinc.In the SEM image,the surface of the oligosaccharide sulfated is smooth,while the zinc-sulfated oligosaccharide is roughness,and there are a lot of protrusions.All of the changes above indicated that the sulfate oligosaccharides and zinc were cooperated,generating a new compound.(2)Zinc-sulfated oligosaccharide could increase food intake,body weight,the zinc contents and the activity of AKP,the weights of liver,kidney,brain and testis,which exhibited good growth and development.And higher activity of SOD and T-AOC and lower content of MDA indicated desirable antioxidant.The effect of medium dose of zinc-sulfated oligosaccharide was similar to that of zinc gluconate,and the effect of high dose was significant higher than that of the same dose of zinc gluconate,zinc sulfate.(3)The metabolites alterations by zinc-dificent mainly including purine,fatty acids,glycerophospholipid,phospholipid,dihydroxyacetone,pyrimidine and aldonic acid,which may affect the biosynthesis of unsaturated fatty acids,the fatty acid biosynthesis,the pyrimidine metabolism,the glycerophospholipid metabolism,the glycerolipid metabolism,the biosynthesis of secondary metabolites,purine metabolism and galactose metabolism.Zinc-oligosaccharide treatment reduced the alterations which induced by zinc-deficiency in serum and liver,which suggested that zinc-oligosaccharide has the potential as a zinc supplementation.
