Selenium is one of the essential trace elements in the human body.It has the functions of anti-cancer,anti-tumor,protection of cardiovascular and cerebrovascular diseases,and treatment of Keshan disease.In the plant-origin agricultural products,this element is mainly associated with biological macromolecules such as proteins and polysaccharides.active.Ankang is an important selenium-enriched belt in Shaanxi Province.Its tea plants have strong selenium-enriched abilities.Therefore,tea will contain a certain amount of selenium.However,the raw materials used for tea-making are spring and autumn tea leaves,which has caused a lot of waste of resources..Therefore,in this study,the non-commercial tea from Ankang of Shaanxi Province was used as the raw material to explore the distribution of selenoproteins,and the preparation and application of selenoproteins in tea was studied,which provided technical method ideas for the development of selenium-rich foods and promoted the tea farmers economy.Income and local area funding development provide technical support.The specific findings are as follows:(1)The distribution of selenium protein in the old leaves of spring tea in Pingli County of Ankang County was investigated.The results showed that the total selenium content in tea was 0.0761 mg/kg,inorganic selenium was not detected,and the organic selenium content was 0.0761 mg/kg.To achieve selenium-enriched standards.Among the four soluble proteins,the acid-soluble protein had the highest selenium content(0.00371 mg/kg),followed by the alkali-soluble protein,salt-soluble protein,and water-soluble protein,slightly higher than the other three soluble proteins.(2)Antioxidant activity of the four soluble proteins.The results showed that the ability of the alkali-soluble protein to scavenge superoxide anion radicals,hydroxyl radical capacity,reducing power,and ABTS radical scavenging ability were all higher than those of the other three proteins.The soluble protein has the strongest activity.(3)Optimization of the preparation process of the alkali-soluble protein with the strongest anti-oxidation activity by pulsed ultrasound assisted alkalining.The results showed that the optimized conditions were ultrasonic power 350 W,p H 7.5,solid-to-liquid ratio 1:12,and extraction time 22.5 min.Under this condition,the extraction rate of alkali-soluble selenoprotein was 35.62% and the selenium content was 0.0028662 mg/kg.(4)Based on the extracted selenoprotein and selenium-enriched tea,the preparation and quality evaluation of tough biscuits were carried out.The results showed that in the 100 g flour,when the amount of white sugar was 25%,the amount of butter was 20%,and the amount of tea added was 9g,the tea sensor had the highest sensory score and the best quality.The tough biscuit has a moisture content of 3.16%,a basicity of 0.317%,a crude fat content of 12.01%,an ash content of 1.36%,a tea polyphenol content of 0.440%,a crude fiber content of 1.47%,and a selenium content of 0.00313mg/kg,which meets the requirements of the national standard.There are more functional ingredients than ordinary cookies and it has practical significance. |
