| Artemisia Argyi Levl.Et Van.Is a kind of medicinal and edible plant with rich nutritional value.However,the folk edible processing of Artemisia Argyi Levl.Et Van.is mostly done with artificial utensils,which is time-consuming and laborious,inefficient and easily restricted by the seasonal growth.To ai grass as the research object,this paper USES the superfine grinding technology in preparation of wormwood processing superfine powder,compared to ordinary grinding technology processing of ordinary powder preparation,research tsao physical index evaluation of superfine powders and ordinary powders,and the elementary element of the tsao superfine powders and ordinary powders,active components and oxidation resistance of analysis,The difference of dissolution characteristics between ultramicropowder and ordinary powder of Artemisia Argyi Levl.Et Van.was preliminarily explored.Based on the traditional rice cake production technology,the optimal technological formula of Artemisia argyi rice cake was studied by using the ultra-fine powder of Artemisia argyi rice cake as functional auxiliary material.The results showed that the particle size and specific surface area of Artemisia argyi powder were significantly reduced,and the dissolution of nutritional components and functional components was effectively increased by ultrafine grinding,which showed strong antioxidant activity.In addition,Artemisia argyi superfine powder as a functional auxiliary material developed Artemisia argyi rice cake,grass green obvious,uniform color,sweet and waxy soft cotton refreshing,fine texture,Artemisia argyi pure rich aroma,the overall flavor is good.This study provides a theoretical basis and practical significance for the deep processing and utilization of Artemisia argyi and the establishment and improvement of rice cake traditional food processing technology system.The results are as follows:1.Preparation and physical index evaluation of Artemisia Argyi Levl.Et Van.powder with different particle sizes.Under the same conditions,five kinds of Artemisia Argyi Levl.Et Van.powder with different particle size were prepared by grinding and drying Artemisia Argyi Levl.Et Van.powder and the physical indexes of ordinary powder and ultra-fine powder were compared.The results showed that the average particle size of ultramicro powder of Artemisia Argyi Levl.Et Van.was significantly smaller than that of ordinary powder.The minimum D50 value of ultramicro powder was 23.75μm,and the maximum specific surface area was 141.80 m2/kg.With the increase of grinding power,the particle size of Artemisia Argyi Levl.Et Van.superfine powder became smaller and smaller,showing a trend of decreasing first and then increasing.After a certain degree,the particle size of the powder reached balance,and it was difficult to continue to decrease.Compared with ordinary powder of Artemisia Argyi Levl.Et Van.,superfine grinding can significantly reduce the particle size of powder,endowing superfine powder with greater solubility,water holding capacity,expansion power and cation exchange capacity,and effectively improve the sensory properties of superfine powder of Artemisia Argyi Levl.Et Van..2.Study on nutrient composition of Artemisia Argyi Levl.Et Van.powder with different particle size.Superfine grinding can make the cell wall broken sufficiently,which can promote the dissolution of the nutrients of Artemisia Argyi Levl.Et Van.powder.Compared with coarse powder and fine powder,the nutrient content of superfine powder of Artemsia argyi increased.After superfine grinding,the crude protein increased from20.85%to 25.18%,the crude fat content increased from 3.04%to 4.83%,and the soluble dietary fiber content increased from 9.76 g to 15.36 g.The content of ash and total dietary fiber increased by 20.76%,58.89%and 57.38%.3.Study on the functional components and antioxidant properties of Artemisia Argyi Levl.Et Van.ultrafine powder.After superfine grinding,the contents of the functional components in the superfine powder of Artemisia artemisia increased,among which,the dissolution amounts of total flavonoids,polysaccharide compounds,total volatile oil and vitamin C were 6.78 mg/g,2.85 mg/g,1.26%and 32.22 mg/100g,respectively.They increased by 75.65%,37.02%,55.56%and 33.03%,respectively.The scavenging ability of ultramicro powder of Artemisia Argyi Levl.Et Van.was significantly improved.The scavenging ability of DPPH free radical,ABTS free radical,OH free radical and the IC50 value of O2-free radical absorption ability of ultramicro powder of Artemisia Argyi Levl.Et Van.,especially ultramicro powderⅢ,was significantly decreased.They had higher total reducing power and higher antioxidant activity,respectively,9.70,3.54,22.87 and 7.55 mg/mL.4.Study on application of ultramicro powder of Artemisia Argyi Levl.Et Van..On the basis of the traditional production technology of rice cakes,tsao superfine powder as functional materials,according to the different proportion of added,with sensory evaluation and quality and structure determination value as examining index,by single factor test and orthogonal test of wormwood rice cakes production process conditions optimization,to obtain the optimal process parameters of wormwood rice cake,glutinous rice powder,sticky rice flour quality ratio is 3:2,The rice cake was made by adding 20%sugar,60%water and 5%Artemisia Argyi Levl.Et Van.superfine powder.It was green,even in color,moderate in hardness,sweet and waxy,soft and refreshing,fine in texture,pure and rich in aroma of Artemisia Argyi Levl.Et Van.,good in overall flavor and fit the public taste.The antioxidant capacity of Artemisia Argyi Levl.Et Van.rice cake was determined and the scavenging capacity of DPPH free radical and ABTS free radical was significantly enhanced.During the storage period,the growth rate of peroxide value and acid value slowed down significantly,and the peroxide value and acid value of oil on the 7th day were0.15 g/100g and 3.80 mg/g,respectively,in line with the provisions of pastry national standard GB7099-2015. |
