Plant Design Of Annual Output Of 2000 Ton Flavored Fish Products

Flavored fish is a kind of unique product,that is produced by means of slaughtering,pre-treatment,cleaning,salting(or fermenting,smoking,frying,steaming,salt baking,vinegar pickling,dry burning,etc.),drying,seasoning,packaging and sterilization.Flavored fish is suitable for all ages for its characteristic of unique flavor,rich nutrition,easy to carry.In recent years,it has developed rapidly and has broad market prospects.Grass carp is one of the"four major fishes"in China.It has been ranking first in freshwater fish farming for many years.Although grass carp has been deeply loved by consumers for its high protein content,rich unsaturated fatty acids and balanced nutrition,its value has not been fully developed.Moreover,it is difficult to store because of high water content,low fat content,high protein content,and a variety of highly active endogenous enzymes in the body.A large number of grass carp were lost due to transport,storage,sales and other conditions of the restrictions every year.This study is great significance to design a 2000t/y flavor fish processing plant to solve the current problem.It will be worthy of increasing agricultural efficiency,fishermen’s income and establishing fishery economy construction.In this design,the plant is located in Changfu Industrial Park,Caidian District,Wuhan City.There is decided advantage with geographical environment,resource supply,logistics and transportation conditions.The project has designed the product scheme,process flow and quality standards,calculated the raw and auxiliary materials,packaging materials,heat,and matched the equipment.The calculation results show that the annual output of 2000t flavored fish products requires 4545.5t fresh fish,103.5t salt,50.8t vinegar,2.4t monosodium glutamate,1.2t liquor,58t ginger,8t scallion and 1.2t spice.It also needs 31750t water,1204300k W·h power,and 202900m~3 gas annually.The following content were carried out the labor quota,the workshop layout,auxiliary departments,environmental protection and plant layout.The economic analysis show that the project needs 30.2265 million yuan,including22.9671 million yuan in fixed assets and 7.2594 million yuan in working capital.The total production cost is 91.763 million yuan,the annual tax payment is 7.6012 million yuan,the net profit is 10.8662 million yuan,and the investment payback period is 2.63 years.The annual output of more than 672t can be profitable.Finally,I drawn the factory location map,flow chart,workshop layout,general layout of the factory and so on.
