Edible fungi are produced and consumed in China.Fresh edible fungus fruit body moisture content is very high,easy to rot.Because of its advantages of easy transportation and long-term preservation,edible mushroom dried products are an important choice for edible mushroom reprocessing.However,edible mushroom drying is a complex heat and mass transfer process,so it is difficult to formulate a reasonable drying strategy without in-depth study of its drying mechanism.Moreover,in the case of drying chamber without numerical simulation analysis of internal flow field,improper structural design leads to poor uniformity of heat flow field in drying chamber and low drying efficiency.Therefore,the simulation analysis of heat flow field in drying chamber is particularly important,and on this basis,the intelligent control of drying equipment is realized.Based on this,it is a hot topic in the current field to develop targeted drying strategies to improve drying efficiency under different industrial backgrounds.In this paper,based on ANSYS Fluent software,the heat flow field distribution of a type of hot air dryer is simulated and analyzed,and the structural adjustment scheme is proposed.Comparing with the original model,the uniformity of heat flow field is proved to be improved obviously.The set up dryer control system realizes the visualization of the whole drying process data and setting drying parameters.The orthogonal experiment of single factor and multiple factor was designed to analyze and select the combination of influencing factors with the best drying effect as the optimal drying regulation law,which can be used to guide the subsequent production of enterprises.The details are as follows:(1)Simulation analysis of heat flow field in drying chamber:The non-equilibrium thermodynamic mathematical model was derived to obtain the equation of temperature and humidity as the theoretical basis.By using ANSYS Fluent software to complete the simulation analysis of the flow field in the original drying room,it was found that the average velocity in the lower part of the drying room was large,but the non-uniformity coefficient was also large,and the average velocity in the upper part was small and it took a long time to reach the expected drying temperature.The new structure of dryer designed on this basis has improved the uniformity of heat flow field of the original structure.(2)The intelligent control system of hot air dryer is built based on PLC:the overall scheme of drying control process is designed by using some existing hardware equipment of the enterprise,and the main program of user control is written to realize the monitoring of temperature and humidity in the whole drying process.(3)Put forward the optimal drying regulation law:The influence factors restricting the drying effect of edible fungi were identified.Under the support of the original simulation results of the heat flow field of the dryer and the control system of the dryer,the single factor and multi-factor orthogonal experiment was designed,the drying data was recorded,and the range analysis method was introduced to obtain the influence degree of each factor on the drying effect.The edible fungi slices were 13mm and placed in pyramid.When the drying time is 20h,the drying effect is the best,which is used as the optimal drying regulation law to guide the subsequent production of enterprises.Based on the simulation results of heat flow field of different structure drying equipment,the drying strategy proposed in this paper has positive significance for the development of technology in the field of van drying equipment.
