Cistanche deserticola Y.C.Ma is a kind of rare Chinese herbal medicine with homology of medicine and food.Xinjiang C.deserticola is rich in polysaccharides,glycosides,phenolic compounds and other functional components,with rich nutrition and extensive medicinal value.Fresh-cut C.deserticola not only provides consumers with eating convenience,but also retains functional ingredients to a large extent and improves commercial value.However,in the process of mechanical cutting,the destruction of tissue cells will accelerate the loss of water and dissolved substances,resulting in the browning,aging and decay of the fresh-cut C.deserticola,resulting in a short shelf life,which is not conducive to market circulation.Therefore,it is urgent to find an efficient way to keep fresh,improve the storage quality of fresh C.deserticola,and meet the market and consumer demand.The reasonable application of modified atmosphere packaging technology in the preservation of C.deserticola is of great significance to the development of C.deserticola industry in Xinjiang.Therefore,this study took C.deserticola in Xinjiang as the main experimental material.to analyzed the peeling process of C.deserticola,quality,nutritional composition and antioxidant capacity of fresh-cut C.deserticola,and explored the effects of the modified atmosphere packaging technology on the quality of fresh-cut C.deserticola.It provides theoretical support for the study of modified atmosphere packaging technology in the storage,transportation and preservation of fresh C.deserticola.The main research contents and results are as follows:(1)The effects of hot water temperature,soaking time,solid-liquid ratio,Na Cl concentration,cold water temperature and cold water soaking time on the peeling effect of C.deserticola were compared,and the optimal process of hot water bleaching and scalding was as follows:The temperature of hot water was 93℃,the ratio of material-liquid was 1:2,the soaking time was 103 s,the Na Cl concentration was 70 g/L,the cold water temperature was 20℃,and the soaking time was 5 min.Under these conditions,the peeling rate(fruit without damage)is 95.32%,the hardness is 14.32 N,L*value is 63.18,ΔE value is 35.56,and the browning degree is 0.27 OD410/g.Compared with the traditional manual peeling method,hot water bleaching andscalding significantly can improve the peeling rate,maintained the fruit integrity,effectively inhibited the browning of C.deserticola,,delayed the deterioration of the quality of fresh C.deserticola,and selected a convenient and friendly peeling technology.(2)The effects of modified atmosphere packaging on storage quality and browning of C.deserticola were studied.The results showed that under the condition of 4±0.5℃,4%O2+6%CO2+90%N2 modified atmosphere packaging could effectively delay the decrease of L*value,hardness,moisture content,Vitamin c content and total phenol content of fresh-cut C.deserticola.It inhibited the increase ofΔE,browning degree,respiratory intensity,relative conductivity,malondialdehyde content,total number of colonies,Polyphenol oxidase and Peroxidase activities.After 8 days of storage,hardness,weight loss and water content of 4%O2+6%CO2+90%N2 were increased by 2.1 N,0.58%and 1.91%,respectively,Vc content and total phenol content were 1.22 times and 1.17 times,respectively,compared with the control group,and browning degree was decreased by 0.25 OD410/g.Respiration intensity,relative conductivity and malondialdehyde content were 80.17%,80.24%and 72.13%,respectively.Therefore,under the condition of low temperature,the treatment of 4%O2+6%CO2+90%N2 can effectively inhibit the browning of fresh-cut C.deserticola,better maintain the sensory quality of fresh-cut C.deserticola.(3)At 4±0.5℃,the effects of modified atmosphere combined with microporous membrane packaging on the changes of active components and antioxidant activity of fresh-cut C.deserticola during storage and transportation were analyzed.The results showed that:Among the treatments combined with modified atmosphere and microporous membrane,M1 treatment had the best effect,effectively inhibiting the rise of browning degree,maintaining the brightness of fresh-cut C.deserticola,and effectively delaying the content of Vc,total phenols,flavonoids,echinoside and calyx glycoside and total polysaccharides.1,1-diphenyl-2-trinitrophenyl-hydrazine(DPPH),2,2’-azino-bis(3-ethylbenzothiazoline-6)-sulphonic aciddiammonium sa-lt(ABTS)and ferric reducing/antioxidant power,FRAP.
