| At present,the development and utilization of buckwheat is mostly limited to the consumption of buckwheat grains.Studies have found that buckwheat sprouts have more abundant nutrients than buckwheat,and their biological activity and antioxidant capacity gradually increase with the increase of germination time.Eelectrolyzed functional water has been used to study the germination of mung bean,brown rice and soybean,but there is no systematic study on its effect on the germination of tartary buckwheat.Based on the above research status,the electrolyzed functional water with different p H and concentration of available chlorine(ACC)was adopted to germinate tartary buckwheat to explore the variation rules of growth characteristics,nutritional components and bioactive components and antioxidant activity in its germination process.It provided the theory and practice basis for the application of electrolyzed functional water in tartary buckwheat sprout and related functional food research and development,which had important theoretical significance and application value.The main results are as follows:1.In comparison with tap water treatment,four kinds of electrolyzed functional water with different p H values of strong base,weak base,slight acid and strong acid were used for germination of tartary buckwheat.It was determined that the slightly acidic electrogenic water SAEW3(p H 6.3,ACC22.08 mg·L-1)was more beneficial to the bud growth of tartary buckwheat.Tartary buckwheat was germinated with six kinds of slightly acidic electrolyzed functional water with different p H and similar ACC as well as with the same p H and different ACC.The results showed that when ACC was similar,SAEW6(p H 5.7,ACC 19.87 mg·L-1)and SAEW7(p H 6.5,ACC 19.80 mg·L-1)with higher p H showed higher germination rates of tartary buckwheat,and the change of ACC had little effect on its germination rate under the slightly acidic condition of about p H 6.2.The results showed that the slightly acidic electrolyzed functional water SAEW3 was more suitable for increasing the contents of soluble protein and reducing sugar in germinating tartary buckwheat,compared with TW of control group,increased by 3.01%and 6.72%,respectively.3.The results showed that the slightly acidic electrolyzed functional water SAEW3 was more beneficial to increase the contents of total phenols and total flavonoids in germinating tartary buckwheat,compared with TW in control group,increased by 15.67%and 9.11%,respectively;the slightly acidic electrolyzed functional water SAEW6 and SAEW10(p H 6.0,ACC30.05 mg·L-1)could greatly reduce the content of GABA-T and promote the content of GABA and GAD.4.The results showed that SAEW3 could improve the scavenging ability of DPPH free radical in germinating tartary buckwheat.The slightly acidic electrolyzed functionalwater SAEW6 was more conducive to the accumulation of Selenium and the improvement of GSH-Px activity;SAEW6 could significantly increase POD activity,Compared with TW in control group,increased 2.58 times;SAEW3,SAEW6 and SAEW10 could obviously promote SOD activity and reduce MDA content. |
