| Zanthoxylum bungeanum Maxim.is an important cash crop,the peel is the main edible and medicinal part of Zanthoxylum bungeanum,sesame flavor and fragrance substances are the effective components of Zanthoxylum bungeanum,is the material basis of the high value development and application of Zanthoxylum bungeanum,but also an important index of Zanthoxylum bungeanum quality evaluation.In this paper,"Dahongpao Huajiao" from five harvesting periods was selected as the experimental material to explore the variety and content changes of chemical components in Zanthoxylum bungeanum peel as well as the antioxidant activity of Zanthoxylum bungeanum essential oil.The main research contents are as follows:(1)For the study of Zanthoxylum fragrances,gas phase mass spectrometry(GC-MS)and gas phase ion migration spectrometry(GC-IMS)are mainly used.38 compounds of zanthoxylum essential oil have been identified by GC-MS,and 90 compounds have been identified by GC-IMS.The variety and content of zanthoxylum fragrances have been studied over time.It was found that ethyl acetate,methyl acetate,ethyl butyrate Ethyl butyrate,ethyl hexanoate,isoamyl butyrate,2-butyricone,3-pentanone,paralene and other major flavor components of early maturation.α-Terpinene,Linalool,ocimene,β-Fenchene,α-Phellandrene,α-Pinene,β-Pinene and so on were always present in the ripening process of prickly ash.Through DPPH,ABTS and ORAC free radical scavenging experiments,the antioxidant capacity of the essential oil of Dahongpao Huajiao was investigated.Among the five harvesting periods of prickly ash,prickly ash essential oil picked during the Start of Autumn solar term had the strongest antioxidant capacity.(2)In this study,the num-flavor components of Zanthoxylum prickly ash were separated by extraction,forward silica gel,recrystallization and preparation of liquid chromatography,and the num-flavor compounds were identified by thin layer chromatography(TLC),liquid chromatography-mass spectrometry(HPLC-MS)and nuclear magnetic resonance(NMR).15.6 g of hydroxyl-β-Sanshool could be extracted from 10 kg of Zanthoxylum with a purity of99.31%.A HPLC method was established for the determination of numbing substance in prickly ash by hydroxyl-α-Sanshool,hydroxyl-β-Sanshool and hydroxyl-γ-Sanshool ash.The method has high precision,reproducibility and stability.Through this method,the hemp ingredients in the peel of Sichuan pepper in the five harvest periods were detected,and the accumulation pattern of hemp ingredients was analyzed.It was found that during the period of Major Heat to the Start of autumn,and the content of hemp substances in the pepper was the highest,44.6 mg/g. |
