Pork occupies a significant proportion of the daily consumption structure of Chinese residents,and it is the main edible consumer product in people’s lives.As fresh pork has the characteristics of multiple production links,long production cycle,perishable,and high requirements on the storage environment,its quality and safety problems are not uncommon.The status of pork quality and safety concerns people’s health and basic consumption safety,as well as the stability of the food market and the competitive position in international trade.Every link in the pork production supply chain will have an impact on pork quality and safety.The pork supply system in my country will be subdivided,and the early warning of the quality and safety risks of fresh pork in our country will be studied in depth and systematically from the perspective of the supply chain,and post-processing will be transformed into Early warning can provide a reference for the supervision and effective prevention and control of my country’s pork quality and safety risks.Based on this,this paper selects the perspective of the supply chain to conduct early warning research on the quality and safety risks of fresh pork.Through a comprehensive summary of food quality and safety early warning and fresh pork quality and safety research,based on the characteristics of fresh pork quality and safety,general early warning theories and models are introduced into the fresh pork quality and safety risk early warning research,and the early warning system structure and safety of this article are determined.Construct a process;according to the relevant theories of fresh pork and its quality and safety,conduct a comprehensive analysis of the current status and influencing factors of fresh pork quality and safety from the five supply chain links of pig breeding,pig transportation,slaughtering and processing,pork circulation and pork sales.Questionnaire surveys are used to investigate and study risk factors,and through factor analysis to screen indicators,an early warning indicator system containing 27 risk factors has been established for the above five key supply chain links;based on risk early warning theory,combined with risk early warning The indicator system establishes an early warning model based on neural network and Bayesian network,collects indicator data through Web data mining technology,builds a neural network early warning model based on Matlab software,and uses the trained model to carry out the risk value of five supply chain links Early warning,Bayesian network early warning model is constructed and trained based on Ge NIe2.0 software,and then the risk occurrence probability of each link is early warned.Compared with the early warning rules,it is concluded that the risk of pork circulation is the highest.Live pig breeding,slaughter and processing,and pork The sales link is second,and the pig transportation link has the lowest risk level;on this basis,Bayesian network is used to further conduct diagnostic reasoning,sensitivity analysis and maximum cause chain analysis on the risk factors of fresh pork quality and safety,and obtain the most critical According to the importance of the 13 risk factors,they are divided into 3important levels,and then the decision-making Bayesian network is established,and the expected utility of each measure under the current risk state is compared and analyzed,and the priority of each measure is obtained.,To provide a basis for the formulation of relevant management decisions.
