| As government departments pay more and more attention to the construction and development of digital agriculture,the Internet of Things,as a new information technology,is increasingly valued and widely used in food and agricultural production.Traditional dry cured ham in China belongs to naturally fermented meat products,with complex production processes and low standardization.Generally,small and medium-sized enterprises and family style workshops produce dry cured ham under natural conditions,which greatly limits the quality and uniformity of the ham.The environmental conditions for the fermentation of dry cured ham have a significant impact on the quality of the ham.Based on the current mature Internet of Things technology and considering appropriate costs,a monitoring system for the fermentation environment of dry cured ham is designed to provide reference for formulating standardization and standardization of ham fermentation,and to improve the scientific management of the fermentation process of dry cured ham.The main research content and results of this article are as follows:1.The overall scheme of the Internet of Things monitoring system for the fermentation environment of dry cured ham has been designed.Through literature review and research interviews,a demand analysis was conducted on the dry cured ham fermentation system,and an overall system plan was designed.2.Completed the hardware and software design of the system.The system adopts the STM32F103RET6 main control chip and LTE networking method.For the ham fermentation environment,suitable food grade sensors are selected to collect relevant environmental data.RS485 gateway and MQTT transmission protocol are used to collect environmental information data,which is instantly uploaded to the Internet of Things platform for storage and analysis.3.A study has been conducted to establish indoor environmental control strategies for ham fermentation.This design adopts a temperature and humidity PID coupling control model to achieve.After establishing a temperature and humidity PID control model,its effectiveness is verified through simulation experiments.The simulation results show that the temperature and humidity PID coupling control model has better control effect than a single temperature and humidity PID control model.4.Completed environmental monitoring data collection and ham physicochemical index detection.The system collected a total of 33568 environmental monitoring data.After monitoring the maturation of ham fermentation,the physical and chemical indicators of the ham were inspected.The inspection results showed that the physical and chemical indicators of the monitored fermented ham met the national food safety standard GB 2730-2015,and the physical and chemical quality was similar to that of traditional fermented ham.Through system testing,it has been verified that all parts of the system are fully functional;Tested at on-site testing points,the testing system can operate stably,monitor and collect environmental data normally;The operation is convenient and the testing effect is good,which has certain reference value for scientific management of the fermentation process of dry cured ham. |
