| Hongda tobacco is one of the primary cultivated varieties in the Yunnan tobacco-growing region and is the origin of the"clear and sweet aroma"style of Yunnan tobacco.It is also an important raw material used in the development of high-end cigarettes.In this study,Hongda tobacco leaves were used as the primary material,and a microencapsulated fragrance with the characteristic flavor of Hongda tobacco leaves was developed using tobacco chemistry technology and fragrance preparation processes.This microencapsulated fragrance was then applied in sensory evaluations of cigarettes.The specific research content is outlined below:(1)Hongda tobacco leaves were extracted and prepared into a paste using a 95%ethanol solution.Different types of macroporous resin materials were used for separation,and the LX-8 macroporous resin was selected through olfactory evaluation to prepare the characteristic components of Red Flower tobacco style.Gel chromatography was utilized to separate the characteristic components of Red Flower tobacco style,and the main aroma components in each fraction were determined by relative aroma activity value.F1contained 3-methyl-6-(1-methylethyl)-2-cyclohexen-1-one,benzyl benzoate,and5-hydroxymethylfurfural.F2 contained 3-methyl-6-(1-methylethyl)-2-cyclohexen-1-one,gamma-terpinene,and farnesol;F3 contained farnesol,5-hydroxymethylfurfural,ethyl palmitate,and phytol.F4 contained 5-hydroxymethylfurfural,nootkatone,isobutyl butyrate,and benzoic acid;F5 contained hexyl isobutyrate and heptanoic acid.(2)Hongda tobacco compound flavor was prepared by selecting monomer fragrances and Hongda tobacco style characteristic components.the olfactory evaluation results of three flavor formulations showed that recipe 2 was dominated by refreshing,sweet,and floral fragrances,with a hint of paste incense.the overall aroma was strong,with good richness,and the clear and sweet fragrance was prominent.therefore,recipe 2 was selected for microcapsule preparation.(3)Hongda tobacco complex flavor microcapsule was prepared by spray drying method,usingβ-cyclodextrin and Arabic gum as composite wall materials,sucrose fatty acid ester as emulsifier.Single-factor experiments were carried out on the core-to-wall ratio,homogenization rate,and emulsifier content with the embedding rate as the response value.The response surface method was used to optimize the preparation process.The optimized process conditions were a core-to-wall ratio of 2.5:1,an emulsifier content of1.9%,and a homogenization rate of 16000 r/min.Three parallel experiments were conducted,and the average embedding rate of microcapsules was 72.17%,which achieved99.13%of the predicted value.The order of the influence of the three factors on the embedding rate was core-wall ratio>emulsifier content>homogenization rate.(4)The morphology of the microcapsules was observed and tested.The results showed that the Hongda tobacco complex flavor microcapsule was a light-yellow powder with the aroma of the Hongda tobacco complex flavor and a slightly sweet smell of toasted bread.Its bulk density was 0.1642 g/cm~3,the angle of repose was 33.51°,and it had good flowability.Scanning electron microscopy observation showed that the Hongda tobacco flavor microcapsule was approximately spherical without collapse on the surface.The thermal gravimetric analysis results showed that the Hongda tobacco complex flavor microcapsules decomposed slowly when the temperature was<300°C,indicating good thermal stability compared to Hongda tobacco complex flavor.The sustained-release performance test results showed that the cumulative retention rate of Hongda tobacco complex flavor decreased by 81.63%on the 90th day,while the microcapsules retained56.83%on the 120th day.The release curve of the Hongda tobacco complex flavor microcapsule was fitted by Avrami’s formula,indicating that the release reaction of the Hongda tobacco complex flavor microcapsule at room temperature was between diffusion restriction and first-order kinetics.Therefore,microencapsulation of the Hongda tobacco complex flavor can effectively reduce the volatilization rate of the flavor.(5)Add the prepared flavor and microcapsules to different types of cigarettes for sensory evaluation.The evaluation results showed that in the sensory evaluation of flue-cured cigarettes,the best harmony and overall sensory score were obtained when the Hongda tobacco complex flavor was added at 5%concentration.When the microcapsules of the Hongda tobacco complex flavor were added at a concentration of 10%,it could improve the aroma quality and quantity of cigarettes,reduce irritation,improve the aftertaste,and not affect the harmony of the original cigarette flavor.In the sensory evaluation of heated cigarettes,the highest rating was obtained when the Hongda tobacco complex flavor was added at 10%concentration,and the aroma,strength,irritation,and taste were all significantly improved.While the sensory rating of Hongda tobacco complex flavor microcapsules slightly increased when the concentration was changed from 5%to10%,it was not significant,so adding 5%was the most appropriate concentration. |
