Dietotherapy is an important part of health preservation of traditional Chinese medicine, and the Ming and Qing dynasties is an important period for the development of health preservation of traditional Chinese medicine, including dietotherapy.Under the influence of social and economic development, changes in the natural environment, exchanges between China and foreign countries and other factors, the sources of food and medicine were further enriched in the Ming and Qing dynasties. For example, frequent foreign trade exchanges led to the introduction of a variety of foreign food products;the need to save famine and prepare for famine led to the new utilization and development of a variety of wild plants in the Ming and Qing dynasties;changes in meat preferences and dietary customs, and so on,all make the food materials in the Ming and Qing dynasties develop obviously than before. At present, the development of TCM dietotherapy in Ming and Qing dynasties is mainly discussed from the point of view of the theoretical characteristics of TCM dietotherapy and the dietotherapy thoughts of different health-preserving doctors, but there are few from the perspective of "ingredients",especially "changing ingredients".This study intends to explore the development of dietotherapy in the Ming and Qing dynasties from the new perspective of "ingredients"and "changing ingredients",in order to provide some reference for contemporary diet.Research purpose:Ccombined with the relevant historical materials of social and economic development, social politics and culture in the Ming and Qing dynasties, based on the development and changes of food materials in the Ming and Qing dynasties, and taking the dietotherapy value of "changing food materials" and its application in diet therapy as a clue, this paper combs the relevant literature, probes into the specific changes of traditional Chinese medicine food therapy under the influence of the changes of food materials in this period, and summarizes the possible function and influence of"change food materials" on the development of diet therapy in Ming and Qing dynasties. It can be used as a reference for the health-preserving practice of contemporary traditional Chinese medicine.Research methods:First of all,by using the method of philology, taking the"changing food materials" in the Ming and Qing dynasties as the research object, this paper annotates "food materials" and "changing food materials",defines the main meaning of "food materials",and determines the meaning of "changing food materials".Define the scope of research, clear research objectives.Secondly, using the methods of philology and history to investigate the concept and evolution of "food materials","changing ingredients" and "dietotherapy",as well as the general situation of the development of "changing ingredients" in the Ming and Qing dynasties, the value of dietotherapy and its specific application in food therapy prescriptions. In addition, the logical research method is applied to closely combine the changes of food materials with the development of dietotherapy,to study the efficacy and health treatment value of changing foods in the development of dietotherapy, and to summarize these contents.to provide reference and ideas for the development of dietotherapy in later generations,as well as a wider choice of food materials.Research results1:the connotation interpretation, development and evolution of "food materials","changing ingredients" and "diet therapy".(1)Through the above explanation of the three concepts of "food","changing food"and "diet therapy","food" is the basic raw material needed for food production;"change food" is a kind of food in which the consumption situation has changed in the process of food development."Dietotherapy" is a custom concept for the convenience of research, and "dietotherapy" is a means and method for the use of food to prevent and treat diseases.(2)By extracting the different development of each stage, the food materials are divided into grain, vegetables, fruits, meat and seasonings, and the ancient development sources of dietotherapy are summarized as germination, construction, development and maturity.2:general situation of changing ingredients in Ming and Qing dynastiesThe main reasons for the changes of food materials are the development of society and the change of nature.the deep exchanges between China and foreign countries during the Ming and Qing dynasties made many new species mainly grain, vegetables, fruits and so on introduced into our country,in addition, with the improvement of the level of production, some condiments were invented.Changes in the natural environment, such as famine, have led to changes in the consumption of some foods, such as grain, vegetables and so on.Combing the general situation of "changing ingredients" is not only the basis of studying the dietotherapy of changing ingredients, but also the premise of studying the application of changing ingredients in the development of dietotherapy in this period.3:the dietotherapy value of changing ingredients in Ming and Qing dynasties and its specific application in dietotherapy prescriptionsThe development and formation of any theory should be implemented in specific methods and applications, which is the basis of understanding, interpretation and application.Food material is the material basis of dietotherapy, which is specifically implemented as the specific role of different food materials in dietotherapy. When exploring the development of dietotherapy in the Ming and Qing dynasties,it is necessary to examine the specific therapeutic value of "changing ingredients" and the specific embodiment of these therapeutic values in dietotherapy.(1)To explore the specific edible and medicinal values of changing grains, vegetables, fruits, meat and seasonings, and to explore the doctors’ views and cognition of "changing ingredients" by summarizing and comparing the efficacy records in many works of Chinese materia Medica. It is found that the understanding of the therapeutic value of some "changing ingredients" has gone through a process of continuous renewal and correction.(2)Not only the therapeutic value of "changing ingredients" is recognized, but it is also widely used in dietotherapy and medicinal diets, which can be used alone to treat and recuperate, and can also be combined with other foods or drugs to form different types of dietotherapy, such as porridge, soup, dishes and so on.Although the promotion of the development of dietotherapy is not only the power of food materials, but because of the changes of "changing ingredients",its possible influence in the development of dietotherapy is worth exploring.4:the possible influence of changing food materials on the development of dietotherapy in Ming and Qing dynastiesThe change of food materials itself is a dynamic, continuous and developing process, which also gives impetus to the development of dietotherapy in this period, which is shown as follows:first, the changing ingredients in the Ming and Qing dynasties enrich the basis of therapeutic and medicinal diets from the aspects of variety, type, processing and scope of application;second, with the in-depth discovery of the edible and medicinal value of changing ingredients, the scope of application of dietotherapy has also changed.Third, through the different understanding and practical exploration of some effects of some changing ingredients,it deepened the development of dietotherapy theory in the Ming and Qing dynasties to some extent.Closely combine the changes of food materials with the development of dietotherapy, study the role of changing ingredients in the development of dietotherapy, and summarize these functions,so as to provide reference and ideas and a variety of food choices for the application of dietotherapy in later generations.Research conclusion:1.The changes of food materials during the Ming and Qing dynasties are mainly as follows:foreign food materials were introduced into China;new food materials were invented;things that were not used for food became food materials for various reasons;the therapeutic efficacy of some food materials changed significantly than before.2.From the perspective of the changes of food materials, the development of dietotherapy in the Ming and Qing dynasties,on the one hand, showed that after the foreign or newly invented "changing ingredients" entered China, its therapeutic value was discovered and used in the form of "localization".As well as the incomplete or incorrect understanding of some local original ingredients has been supplemented and corrected. On the other hand,it is shown in the corresponding changes in the content of specific dietotherapy prescriptions with the continuous discovery of the edible medicinal value of"changing ingredients",including dishes, rice porridge, soup, wine and other liquids.3.The changes of food materials not only correct some cognitive biases existing in the records of certain medicinal materials in previous works of Materia Medica or dietotherapy, but also enrich the basis of dietotherapy, and at the same time, with the deepening of modern research,it also increases the scope of clinical application of some dietotherapy.finally, the analysis of the function of some changed ingredients deepens the development of dietotherapy theory, and helps to guide the application of modern dietotherap.
