The pilose antler is the traditional precious nourishing health products, the content of chemical composition and active composition are abundant in it, pilose antlers have extensive pharmacology activation and medical treatment and health care function, the potentially developing and utilizing value and economic value are very enormous. In order to make this resource get rational development and utilization, should strengthen the study on its basic theory and application and development deeply, so, such respects as the chemical composition analysis from the pilose antler of research, separation and extraction of the active composition of the polypeptide and function appraisal, processing technology of active pilose antler, function food, appraisal of biological function are have carried on with overall system in this study, the result of study is as follows:1. Having compared the pilose antler of five kinds of deer assortment for the first time, the content of crude protein of pilose antler is all above 50%, crude fat content in 2%-4%, the contents of extract with water, alcohol, ether are more than 10%, 3%, 2% respectively; The content of the amino acid is relatively up to 30-55%, the content of the inorganic element reduces progressively from base to the top of pilose antler, the content of phosphatide and taurine in the pilose antler is relatively high, up to 0.66-2.68% and 0.05-0.15% respectively; in addition, pilose antler contains polyamines, such as putrescine, spermidine, spermine, etc.; vitamin, such as vitamin D, E, etc.; hormone such as estradiol, testosterone, etc.; the chemical composition of different varieties of pilose antler or different positions of the same pilose antler have differences, therefore the value of using pilose antler as medicine of different varieties and different position of antler is different.2. Having set up the method of frozen preservation to keep freshness of pilose antler in this study, which provides safeguard for the processing active pilose antler, it is a kind of effective method to keep fresh pilose antler too; Having set up the processing technology of active pilose antler., the enzyme vigors of AST, ALT, ALP, CK, LDH, R-GTγ, CHE in the active pilose antler improve by 2.5- 240 times comparing with which in the pilose antler cooked with water. The amount of hydrolysised amino acid improves by 6.93%, animal's experiment proved that the active antler, compared with the pilose antler cooked with water, can obviously prompt the weight increase of mice, this showes that no factor in the active antler ,which accelerate the growth of mice, were lossed and destroied.3. The purified active polypeptide of pilose antler was obtained by steps of separating with buffer, sinking with the alcohol, and Sephadex G-50, CM-Sepharose Fast Flow chromatography. There is only one strip through SDS-PAGE electrophoresis which show that it is the single polypeptide, its molecular weight is about 3200, the amino acid analysis illuminate that the polypeptide is made up of Ala, Asp, Ser, Val, Lys, Leu mainly.4.The research of the function appraisal and mechanism of action of the polypeptide prove that it can strengthen phagoctosis of mononμclear phagocyte in mice notably, and increase contents of serum haemolysis and IgG and conent of serum IgG in mice immuned by sheep's red blood cell; Can oppose the immunosuppression action caused by cyclophosphamide to phagocytosis of mononuclear macrophage in mice, so the polypeptide have the function improving the cell immunity and immunity of body fluid of the organism.5, the function beverage of pilose antler was developed utilizing pilose antler, hawthorn,licorice root, etc. as raw materials. The craft of liquefaction with enzyme can improve out 14.4-17.8 percent of juice yield, the content of soluble solids improves by 2-3 percent; the result of function appraisal proved that the beverage can promote growth and development, delay the organism senescent and resist the fatigue and condition of meagre oxygen, so it is safe and nonpoisonous.6.
