Selenium is known to an essential micronutrient for living organisms, and is the important ingredient of the strongest antioxidase in the human body (GSH-Px). The lake of Selenium will decrease the activity of GPx, weaken the ability of histiocyte oxidation resistant damage, affect the division, multiplication, heredity and growth of cell directly, leading to disturbing the synthesis and metabolism of nucleic acid, protein, amylase and enzyme. The research of epidemiology shows that the incidence of 40 kinds of diseases such as Keshan disease, cancer, angiocardiopathy, cataract, diabetes, AIDS and so on is related to the low level of Selenium in human body. Lacking of Selenium in the soil is a general issue all over the world, 72% of areas in our country is the lacking of Se area, the food chain is under the low selenium state, supplement of Se with nature food can not improve the state of Se-lacked radically. As a result, there is a wide-spread concern that how to satisfy the Se need reasonably and safely and protect the health for living organisms. The research shows that supplement product about organic Se has superiorities on toxicological security, biological activity and absorption, therefore the development and research of this product is paid more attention to. Selenium in human body exists in selenoamino acid metabolic pool and selenium modulatory pool, because human can not synthesize Se-Met in the body, while selenium in the diets is deficient, the Se-Met in the Se-Met metabolic pool will be decomposed by human body to selenocysteine through transfersulfur rountine, providing the synthesis of selenoprotein for human. Hence Se-Met all come from external sources supplement. For the development of organic selenium sources, certain edible fungus have strong potential of Se-enriched as the newest discovery, and can make selenium organize through metabolism of hypha cell. Corelyceps militaris link gains more and more recognition in increasing immunological capacity and antineoplastic activity of human body; various nutrient components in flammulina velutipes are more than that in the other vegetables, flammulina velutipes can be called a subminiature nutrient pool. Taking two representative edible fungus that corelyceps militaris link and flammulina velutipes as Se-enriched carrier, Se-enriched corelyceps militaris link and flammulina velutipes are cultured, the connatural and synergic physiological action of selenium and edible fungus can be brought synchronously, under the condition of selenium uptaking deficiency generally...
