Eight winter wheat varieties was drilled in 13 sites of different environment conditions in Shandong province for studying the effects of wheat genotypes and environments on main quality characters and the relationship between nitrogen metabolism enzyme activities and grain qualities of wheat varieties. Different nitrogen and water treatments were design, Jimai20, a high quality winter wheat varieties as trial materials, by pot and field experiment, to analysis the forming characteristics of protein and starch quality of wheat under different nitrogen and water conditions, and give out the nitrogen and water measure for high yield and quality of wheat.The results indicated that:1 Quality of different type wheat varieties in different site 1.1 Effects of genotypes and environments on protein and starch quality of wheatThere was obvious difference between the yields of the same wheat varieties drilled in different sites, which mostly related to the climate. The climate of Jiaodong region is suitable for wheat growth, the yield of wheat there higher than other regions. The qualities of wheat in Longkou were better than those in Taian. Among them, Jimai 20 was the best, while weak gluten wheat varieties were lower. It indicated that environment of Longkou is suitable for the production of the high quality and strong gluten wheat; the environment of Taian is not suitable for the quality improvement of strong gluten wheat varieties.The nitrogen content of grain of strong gluten winter wheat was distinctively higher than other two type wheat varieties, and it behaved better in Longkou than in Taian, but the behaved of medium and weak gluten wheat was better in Taian.
