| The preventive and therapeutic effects of n-3 polyunsaturated fatty acids (n-3 PUFA) on atherosclerosis were investigated at three levels (in vivo, organ & tissue, and cell biology level) in experimental animals or on cultured fetal umbilical vein endothelium. Effect of n-3 PUFA on the formation of experimental atherosclerosis in quail.Quail uas used as the animal model because of its high sensitivity to dietary cholesterol to form atherosclerosis.They were divided into Control(n=10), high cholesterol(n=38) and therapeutic(25) group. The animals were fed with high cholesterol diet ( 79% normal forage, 20% lard, 1% cholesterol) 15g/day for each in the latter two groups and also n-3 PUFA 200mg/day for each in the therapeutic group for 10 weeks. After that, atherosclerotic lesions of aorta were examined under stereoscope and electronic microscope. Blood lipid, liver index, serum lipid peroxide (LPO), and components of serum fatty acid were measured. Body weights were checked up at three-week intervals. Histological change of liver and neck subcutaneous fat were also examined.The results indicate that, n-3 PUFA not only prevented the formation of lesion, but also decreased the severity of it by the way of lowering LDLC, TC, and LPO. In addition n-3 PUFA suppresses the increment of body weight, the deposition of neck subcutaneous fat. and the severity of fatty liver. It suggests that n-3 PUFA has a broad influence on lipid metabolism of whole body.â…¡.
