In this paper,the method to detect liquid mixture is studied theoretically.The fluorescence spectra of synthetic food and the fluorescence polarization characteristics of synthetic food pigment solution are analyzed combining with quantum calculation.Moreover the fluorescence spectroscopy and multivariate statistical analysis are employed to study the effects of various components as well as the method for the inspection of commercially available beverages.1.Based on the density functional theory,the molecular space configuration of synthetic food coloring Ponceau 4R and New Red are optimized,combing with quantum chemical calculation method and using Gaussian software.Furthermore,their vibrations,front molecular orbital energy and emission spectra are calculated.The relative error of the calculated peak value of the emission spectrum and the experimental value is 3.8% and 0.78%,respectively.In addition,Sudan I-III,which are the industrial pigments and often added illegally for food,are also calculated in a similar manner.The calculated values are in agreement with the experimental values.2.The fluorescence polarization spectra of 11 kinds of synthetic food pigment solutions,are determined which are allowed to be added in the present country.Particularly,the dipole moment changes of New Red and Erythrosine molecules in the excited state are analyzed emphatically.The mean angular displacements of the transmitted dipole moment are 3.91 ° and 9.25 °,respectively.The spatial structure of New Red and Erythrosine are obtained.In this paper,a method for obtaining the spatial structure of synthetic food pigment based on fluorescence polarization was established.3.The three-dimensional and synchronous three-dimensional fluorescence spectra of 11 kinds of synthetic food pigments are measured,and the fluorescence characteristic parameters are extracted.On this basis,the detection method of pigment was studied.The conventional three-dimensional spectral data of Fancy Red and Sunset Yellow and Bright Blue mixed solutions are calculated and analyzed by using the second-order correction algorithm.The average relative error is less than 3.0%.The average relative error of the pigment concentration calculated from the mixture of Amaranth and Bright Blue is 11%.Furthermore,the average relative error of the chromatographic concentration is only 4.0%.This result indicates that the synchronization data can solve the problem of spectral overlap effectively,which is more advantageous in the detection.Thus,a detection method of fluorescence spectroscopy combined with the second order correction algorithm is established.The qualitative and quantitative determination of each component in mixed pigment solution is realized.4.Based on the synchronous fluorescence spectroscopy,the concentration of Amaranth in the commercial cocktail is determined by the parallel factor algorithm.The average relative error is 4.0%.The derivative fluorescence can be used to classify the apple juice beverage through the principal component analysis method.The correct rate is 100%.Also the quality of traditional Chinese medicine Liu Wei Di Huang pills was evaluated,and significant results were obtained.The results show that the fluorescence spectroscopy combined with the multivariate statistical analysis algorithm can realize the effective detection of liquid mixtures.In general,our study provides technical support for the application of fluorescence spectroscopy in the detection of liquid mixtures,which also provides a reference for the study of complex liquid mixtures.
