Beef is one of the main meat products for humankind. With the improvement of standard of living,people begin to pay more attention to the quality of beef. If producers could provide segregating beef to its consumers in affirmatory quality, it will enable consumers to select the grade of beef in their affordable range, and it has the potential to improve the market value of beef. There is still no technology for the rapid, accurate and non-destructive detection of quality in fresh beef. The hyperspectral imaging technology has become the new method which is non-destructive in the detection of quality and safety of agricultural product.In this paper, hyperspectral imaging testing system was established to predict fresh beef quality attributes. Based on the hyperspectral imaging testing system, the rapid nondestructive online testing system for beef multy quality parameters was developed. The beef quality parameters, such as color,pH value, moisture content and the total bacteria count, can be predict by the two systems.The main accomplishments of this study are as follows:1. The hyperspectral imaging testing system for beef quality was developed. The system mainly consists of a high-performance back-illuminated CCD camera, an imaging spectrograph, light unit and PC. Wavelength of the hyperspectral images collected by the spectrograph ranged from 400 nm to 1100 nm. Using the testing system, the hyperspectral images of beef sample can be collected rapidly and the quality parameters can be predict.2. Application software for the testing system was developed. The functions of hardware parameters set, move control, data collecting, beef quality parameters prediction, results showing were included in the testing software. Test for beef sample can be done automatically by one key on user's panel.3. Various factors which might influence the hyperspectro imaging testing system during the cause of testing were analyzed. The methods to decrease the testing error produced by different factors were developed.4. Based on the research of the hyperspectro imaging testing system, the rapid nondestructive online detecting system for beef multi-quality-parameters and the testing software were developed. The effective band range of the testing system is 400-2500nm. The main parts of the testing system were two spectrometers which working bands are 382-950nm and 800-2600nm. The detection probe with light source inbuilt designed for the testing system and the two spectrometers were connected by one Y-type optical fiber. Tenderness, moisture content and color can be detected rapidly online by using the rapid nondestructive online detecting system.5. Performance tests were done for the hyperspectro imaging testing system and online testing system.The results showed that the testing accuracy of the hyperspectro imaging testing system for total bacteria count was 90%, and the accuracy of the online testing system for tenderness was 91.7% and for moisture content was 92.8%. Tests in slaughtering enterprises for the two testing systems were done, and the results showed that the testing systems can be used in slaughtering enterprises.
