With the development of pepole's living level,people's intake of healthy nutrition has become more and more refined,and the active ingredients of lipid soluble function have been used more and more widly in food,cosmetics,medicine and health care products.The poor solubility of pro-lipid components in the aqueous solution hinde its absorption and usless in the human body.Usllay the bioactive pro-lipid components are needed ecapsulated in the emulsion,liposome,micocapsule or its modified derivatives and absobed by oral way.However these systems existing a series of problems that the poor controlling release and digestion rate.Therefore in this research,we construct gel-emulsion composit delivery system bas in theed on the theory of different charge absorption and mosaic texture and provide a new idea and method of controlable release and digestion of pro-lipid biochemicals in gel-emulsion composit delivery system by studying its releasing in the aqueous solution and stimulating the digest charactors.The conclusions are showns as follows:In this suty,we cucessfully construct the emulsion adsorption gel microsphere delivery system with high apparent viscosity in the high oil content emulsion system.The optimized parameters are that the p H is below 5.5 and oil content is 2% in the wall of material.In this system,the surface charge,particle size and upper emulsion turbidity of the surface charge,particle size and upper layer emulsion were stabilized,and the surface adsorption emulsion was saturated.We futher studeid the rheological properties of the carrier system in high oil environment and found that the nanoemulsion-alginate microsphere composite delivery system can significantly increase the apparent shear viscosity of the emulsion system with high oil content increasing.We sucessfully construct the oil gel-inner-gel(O/M1/M2)composite delivery system based on the mosaic structur.In this system the release and digestion of oil is effectively controlled.The order of the oil digestion rate in simulated oil digestion isshowed as follows: emusion(O)>carrageenan gel microspheres(O/MC)> sodium alginate gel microspheres(O/MA)>sodium alginate gel microspheres loaded with carrageenan gel(O/MA/MC)>carrageenan gel microspheres loaded with sodium alginate gel(O/MC/MA).The inhibition of digestion rate of O/MA is better that O/MC in the monolayer loaded;while the inhibitory effec of 2 layers loaded(O/M1/M2)is better that monolayer laoded(O/M1).In the structure of layers loaded(O/M1/M2),the delivery system(O/MC/MA)with sodium alginate as the outermost structure has a stronger ability to inhibit digestion than the carrageenan delivery system(O/MC/MA).The composit delivery system of chitosan adsorstption the oil carrageenan gel microsphere(O/MCA/MCH)has a better effect of controlling the oil release and digestion.p H and stirring time are the impotant parameter on cotrolling the oil release.Therefore we study the effect of p H and stirring time on the release charactors of O/MCA/MCH composite delivery system.When the p H is between 2 and 6,the chitosan with positive charge can be sbsorded the surface of carrageenan gel microspheres with negative charge based on the interaction of different charge and form the O/MCA/MCH composite delivery system.In this system,the dissolution of carrageenan gel can be effectively prevented and the oil can be controlled with 60 min stirring.We successfully the carrageenan adsorption O/MCA/MCH composit delivery system with favourable controlling ability.The opitimized parameters: p H is from 2 to 6,the concentration of carrageenan at outermost and the chitosan at outerlayer is 0.1%.In this condition,we study the effect of 3 times washing and found that the structure of the carrageenan adsorption O/MCA/MCH composit delivery system is intact and increase 3 times of controlling ability compared with O/MC control group which can broaden application of carrageenan and chitosan in the field of controlled release of gel carrier system.On the O/MCA/MCH system,we construct the multi-layer of chitosan-carrageen composite delivery system(O/M1/M2/Mn(n=6))with better ability of controlling release and digetion based on the interation of different charge.In the study we found that the charge is alternately positive and negative with the increase of layer numbers,the particle size gradually increases and the digestion rate of the oil is slow and the total amount of fat digestion decreases in the multi-layer of chitosan-carrageen composite delivery system(O/M1/M2/Mn(n=6)).The establishment of this system provide a new idea and method for expanding application of layer number on the effect of controlling digestion rate in the O/MCA/MCH composite delivery systerm.
