actose in yogurt is better digested than lactose in other dairy foods by lactose-maldigesting individuals, partly because of intraintestinal activity of yogurt microbial ;To evaluate the ability of different strains and species of lactic acid bacteria to digest lactose in vivo, yogurts (manufactured from different strains) and fermented milks (manufactured from different species) which varied in ;Some lactose maldigesting individuals may consume large amounts of lactose over time, without intolerance symptoms or increased mucosal lactase activities, possibly due to adaptation of the colonic microflora. Using continuous culture as a model, fecal microflora of three lactose-maldigesting subjects appear to respond within 2-3 days to chronic addition of dietary lactose. Both pH and lactose loads affected parameters of lactose fermentation.
