In the 20th century, mesoporous materials developed a new material system, a notable feature is a regularly arranged, the size of adjustable pore structure and higher specific surface area and large pore volume. Mesoporous molecular sieve is a common mesoporous materials, because of the unique pore structure and properties, it can serve as an excellent carrier of catalyst.For its intensive proteolytic activity, papain is widely used in the proteolysis of protein, food processing, and production of medicine. The immobilization of papain is also important for its great industrial and medicinal potentials. Moreover, the immobilization of enzyme increases the robustness of the enzyme towards organic media, nonphysiological pH, and temperature.In this study, SBA-16 was synthesized by using surfactant F127 as template, TEOS as silica source under acidic conditions. The relative activity of immobilized papain on mesoporoous SBA-16 and SBA-15 were studied by different mixing time, enzyme concentration and pH of solution. Under the optimum immobilization conditions, the pH, operational and storage stabilities of immobilized enzyme are greatly improved compared to the free enzyme, which was beneficial to the reuse and storage of immobilized enzyme.
