After having studied the functions of entrapment carriers including sodium alginate, agarose, agar, the sodium alginate was selected to entrap ructosyltransferase for fructooligosaccharide production. Utilizing a lab scale reactor, the experiment was carried out to elucidate the conditions of producing fructooligosaccharide. The results showed that the optimum reaction conditions for sodiun alginate concentration, enzyme concentration, substrate concentration, temperature, pH, and time were 1. 8%(w/v), 5%(w/v), 60%(w/v),60C, 5.0 and lh respectively. The continuous fructooligosaccharide production by immobilized enzyme was achieved using a lOOml reactor with the optimum conditions mentioned above and liquid retention time of lh. The content of fructooligosaccharide was ranging from 49. 1% to 44. 0%. The stable concentration of fructooligosaccharide content was 45.0%. |
