With drug eclipse dual-purpose health food―― balsam pear(viridescence balsam pear)for raw material,we developed out five strain color, incense, sapor complete beautiful,free of any pigment, preservative balsam pear juice AND compound balsam pear juice health drink,which can be approved to some exceptional persons group.Through single factor try , orthogonal test AND dispensation built-up optimize,the best production process were ascertained, as well as the best production process of the beverage and the best combination of the beverage dispensation.The palatability , mouthfeel and durability of the last production are pretty good.Both browning AND protective coloration of the balsam pear juice were in some detail looked into ,then we ascertained zinc gluconate AND calcium hydroxide for color fixative and effectively kept balsam pear raw material proper green.By replication AND adjusting the procecing,the proper bitter flavor of the balsam pear was commendably kept.In the experimental run we had established the sense organ standard of perfection AND quality standard of the balsam pear beverage and approached the selection and recruitment of the stabilizer, appending OR NOT the sour agent,certifying the scheduled process of the product.Under the condition of room temperature and in weak light,the production can upkeep good color ,no sedimentation and no degeneration after six months storage.
