In our country,there are abundant potato resources with very wide and comparatively concentrated distribution.This makes it very suitable for the starch production industrialization.Potato starch has excellent property and developed potential.It has active significance in developing industiy of potato starch toward adjusting structure of agricultural industry , exploiting regional economy and driving cropping industry. Technology of potato starch is low-level in extraction rate and benefit in today.Increasing extraction rate of potato starch is an effective way of raising economic benefits and strong concern by starch world. This paper has analyzed the existent position of potato starch and starch speciality from the micromechanism.It also do some research on the technology of starch extraction and the factors to influence starch extrication rate and the method of increasing starch extraction rate. main content and conclusion is following:1.It has done the broken experiment by using fresh potato plane threadlike machine and has researched the processing method of increasing starch extrication rate .Researched consequence has shown: The factor order which influence starch extrication rate, that ~5: (DLinear velocity. ?Production rate. ㏕ooth knife position. (~) Water feeding. The main energy leading potato broken is kinetic energy. The more consumption of kinetic energy~ the higher starch extrication rate.2.It has done the technics arrangement by using screen of spill wash and has researched the theoretical analysis of sifting efficiency in screening technology and has confirmed the theoretical numeration of sifting progrcssion.Extraction rate of starch is related to sifting progression toward given material and sifting efficiency.If sifting progression is reasonable , then extraction rate of starch is high and extrication starch is least in potato residue.3.It has researched the technics arrangement of the full-cyclone separation and the disposition of the cyclone pipe with the influence of extraction rate of starch in separation tecbnology.It has analyzed the relation of the cyclone progression with extraction rate of starch in the full-cyclone separation technology and has confirmed the theoretical numeration of cyclone progression. in the full-cyclone separation technology. Extraction rate of starch is related to the separation progression toward given material and separation effect. If separation progression is reasonable,then extraction rate of starch is high and extrication starch is least in the mixture of potato residue and juice.
