Excessive dietary fat intake is associated with increasing risk of obesity, high blood cholesterol, coronary heart disease and some types of cancer. Foods formulated with fat substitutes are an enjoyable alternative than familiar high-fat foods. At present fat substitutes are fashionable all over the world. Sucrose polyester is a new functional fat substitute. In the world, the research and development of sucrose polyester still is promising. In this paper, oleic acid methyl esters were synthesized by methyl alcohol and oleic acid in supercritical state with supercritical fluid C02, and sucrose polyester were synthesized with sucrose and oleic acid methyl ester as materials by microwave radiation. Because the SFC has great diffusivity and good solubility, the gas-solid phase reaction is carried out in a similar homogeneous situation. A yield of oleic acid methyl ester about 94.83% was obtained the action time was reduced from 9 hours to 30 minutes. In addition, the influences of the reaction time and reaction power under the microwave radiation on the yields were also studied. The microwave radiation method takes only 1/10 time as short as the time taken by traditional heating method, and the yield of 87.3 0% is higher than that by the traditional heating method by about 17%. The analysis results of the product show that the physical properties of sucrose polyester are similar to the normal food oil, and the product possesses good anti-oxidation and thermal stability. We believe that our results will open a new way to realize a large-scale industrialized manufacture of sucrose polyester.
