The experiment is designed for a new technological process to contain deterioration of the quality of buckwheat during storage. So we chose several representative strains of buckwheat from Inner Mongolia as subjects. On the basis of a theoretical analysis, we studied the process for keeping the quality of buckwheat grains and seeds with the use of vacuum package and reagent.The results of these experiments show: Light has a quite effect on color of the buckwheat, but has little effect on free fatty acid. Vacuum package is effective on keeping green without any light, but if with light, its effect on this color is not obvious, which is less better than common storage and worse than keeping green with reagent. The 0.5%Zncl2 is effective on maintain the green for the buckwheat grains, and its light-avoiding is better. Meanwhile the 0.5%-1.5%NaHSO3 is also effective on keeping the green color for buckwheat seeds under light indoors. The results of these experiment also show: Vacuum packing is the most efficient way of checking the free fatty acid in buckwheat grains, with vacuum being kept above 80Kpa. The concentration of free fatty acid in the sample may decrease to 42% of common storage; However, the concentration of free fatty acid with use of the reagents rise to 130%-133% of common.According to the above results: we confirmed the new technological process of buckwheat grain and seeds. Meanwhile we described the pressure puzzles and vacuum pump emphatically.
