This paper study on the lightly hydrolysis of different amylase ( Glucoamylase and a -amylase ) on common maize starch to prepair porous starch. Discuss the methods and technical condition of hydrolysis. The results indicate that, the porous starch attained has a higher adsorption of oil, it is about 0.4~0.5g/g. The SEM photograph shows that the porous starch granule looks like honeycomb, the distribution of pores on surface of porous granule was about 0.2-0.3/u m2 , the diameter of pore is between 0.5~1.5u m, the depth is not homogeneous, some holes penetrate into the center. Analyzed by BET shows that the surface area of porous starch is much larger than native starch. The results of Brabender and analysis indicate that the viscosity of porous starch decrease dramatically, the paste stability is fairly bad.When the porous starch cross-link treated, or the native starch HMT treated than hydrolysis by amylase to get hollow porous starch, can get better porous starch, and increase the oil adsorption lightly.
