The multiplication of Bifidobacterium Longum in artificial inoculate pickles fermented by Lactobacillus plantarum was mainly studied in the paper. The growth characteristics of the Bifidobacterium Longum were studied . J-1 was trained to be suit for acid and oxygen . The relationships of the two kinds of bacillus were also discussed . A few ofgrowth factors were compared. The seed medium formula, the fermented liquid formula and the best fermentation conditions were determined. The ratio of mixed fermented liquids was also determined. The Bifidobacterium Longum number of products in different packages were compared finally. Results are as follows:1. The Bifidobacterium Longum (J-l) can bear oxygen, acid and salt to some extent, but can not grow well.2. After training to oxygen and acid, the Bifidobacterium Longum (J-l) can grow well under the pH4.2,and can bear the oxygen well. After being trained the Bifidobacterium Longum did not take place the variation.3. When Bifidobacteria Longum (J-3) and Lactobacillus plantarum (L-l) are inoculated in mixed culture in different ratios, acid can be accelerated to produce. Bifidobacteria Longum (J-3) can promote Lactobacillus plantarum (L-l) to grow. Before 16h , Bifidobacteria Longum number in mixed cultures is higher than which is in pure. More inoculated quantiy of Bifidobacteria Longum (5%) can keep higher bifidobacteria Longum number and more inoculated ratio of Lactobacillus plantarum (L-l) is necessary, it can shorten ferment time.4.Comparing Jerusalem artichoke, potato, soybean, compositions from Jerusalem artichoke can propagate Bifidobacterium Longum better.2% extractions from Jerusalem artichoke can propagate Bifidobacterium Longum best.5. Several formula of seed mediums were compared, milk+20% tomato juice+2%extractions from Jerusalem artichoke can accelerate to produce acid, attain higher Bifidobacterium Longum number. The best ferment liquid formula is 2% extractions from Jerusalem artichoke +1.0% salt+2.0% soybean milk +20% tomato juice+1.0% glucose.6. The best mixed fermentation conditions are 36 C , inoculated ratio of 2:1, pH6.4 inoculated quantiy of 6%.The best fermentation conditions of bifidobacterium Longum is 39 C, inoculated quantiy of 5%, pH6.8. Lactobacillus plantarum is inoculated in excellent fermenting term as 28 C ,5% of inoculated quantiy.7.The end point of Bifidobacterium Longum ferment and lactobacillus ferment are 18-24h and 16h.8.After single culture, the ratio of 1:2 of Bifidobacterium Longum ferment of ferment and lactobacillus ferment can taste good,but the technology has no difference with mixed fermentation.9.Comparing of pickles , common soft packing and vacuum-packed under 4 C,the vacuum-packed can be good to keep higher Bifidobacterium Longum number.
