Extraction with supercritical carbon dioxide and microencapsulation with Beta-cyclodextrin were investigated in this article .Emphasis was putting on conditions for extraction ,choosing suitable embed method with Beta- cyclodextrin and making sure the parameters of microencapsulation,then assessing microencapsulation products' characteristics.results showed that:1 .The most proper conditions for extraction with supercritical carbon dioxide are :water amount in ginger powder 10%,brokenness of powder 20~40eye,extraction pressure 35MPa,extraction temperature 50 ,extraction time 180min,separation pressure 6.0MPa and separation temperature 30 .Ginger oleore extraction ratio reaches 5.11% under this condition.2.Ginger oleore was microencapsulated with Beta- cyclodextrin by churning ,ultrasonics and milling.Proper method was choosen according to retention ratios and using conditions.Retention ratio of ultrasonics,milling and churning is 97.21%,94.81%,84.59% apiece.Ultrasonics requires expensive equipments and deals with less quantity while milling deals with greater quantity, requires plain equipments and is easy for operation .So milling is selected for microencapsulation with Beta- cyclodextrin.3.The most proper conditions for microencapsulation with Beta- cyclodextrin by milling are ginger oleore (ml): Beta- cyclodextrin (g)1:8, water amount 60ml, milling times 12, clearance degree 10~15 m.4.Comparing with normal drying way ,the products produced by freeze-drying have similar retention ratios and better dissolution, but considering of economy and the field they applied normal drying way is selected in the experiment.5.Microencapsulation production is primrose yellow, having feint ginger aroma,It can emanate typical ginger aroma while melted or heated. Its liquidity is fine, retention ratio is 94.81%, harvesting ratio is 90.05%, sizes are about 8 m , water holding ratio is 4.63%, density is 0.3974 103kg/m3,melting and granule scatter characters are fine. This kind of products have good thermal stability,their characters accords with normal microencapsulation's standards.
