The technics conditions and characteristics of dietary fiber (DF) were studied with materials of the dregs of white trumpet lily and tiger lily after separating starch. Also the behaviors and kinetic model of adsorption of lily DF were investigated in order to provide theoretical evidences and technical guides for the comprehensive utilization of lily. The main results as follows:Single factor test showed that the content of DF was mainly affected by the concentration and temperature of NaOH and the temperature of H2SO4. The orthogonal test was performed to determine the optimum technics for the DF from the white trumpet lily and tiger lily. The results indicated that the dregs were marinated in 0.4% of NaOH at 50@ for 4h, and then in H2SO4(pH2) at 70@ for 2h.The optimum conditions for blenching DF were established by orthogonal test. The prime factors on DF from tiger lily included 5% H2O2, 55@, 5h and pH10. The optimum factors on DF from the white trumpet lily included 4% H2O2, 50@, 4h and pH8. The influence of the four factors on the blenching of DF was in order of H2O2, pH, time, and temperature.The physical and chemical properties of DF from the white trumpet lily and tiger lily were analyzed to be water-binding capacity 4.1mL/g and 3.5mL/g, dilatability 6.5mL/g and 6.1mL/g, combining water capacity 7.1 g/g and 6.5g/g, exchangeable cation capacity 0.73 mmol/g and 0.83 mmol/g, and fat binding capacity 4.4mL/g and 5.2mL/g, respectively. The viscous was found to be lower in the two kinds of DF.Sodium nitrite was strongly adsorbed by the dreg and DF from the white trumpet lily and tiger lily. The adsorption amounts on these samples were calculated to be 73.8%, 88.5%. and 80.2%, respectively, which indicated the finished DF treated with acid and base took on stronger capability than the original dreg. The adsorption capability of sodium nitrite on the dreg and DF increased with the increase in temperature though temperature had minor effect as compared with pH. Also the finished DF treated with acid and base had stronger capability of sodium cholate than the original dreg. The maxima of adsorption on the dreg and DF were 0.28g/g and 0.37g/g, respectively.The DF could adsorb minerals such as Fe2+ . Zn2+, Ca2+ and Mg2+. The interaction mechanism between DF and minerals were described by a kinetic model, in which the model parameters were estimated by mathematics method. Results showed that minerals were not intensively adsorbed on the DF. It suggested that the behavior will not influence the adsorption of minerals by body when the DF was properly added to food.As discussed above, the quality of DF from lily was greatly improved through processing with the technics. It is promising to use the DF to prevent illness, such as constipation and high blood lipids. The technics is simple and low in cost, which is worth to be developed as a production.
