Lotus seed is a distinguished agricultural product in Fujian province, Instant frozen lotus seed as one of new developed natural green products , has a abroad market in Hongkong, Macao, Taiwan and southeast of Asian region . However, its own speciality - abundant polyphenol oxidase (PPO) and polyphenols, results in polyphenols oxidation easily. In this paper , discussing the value and health protection property of lotus; researching Jian-lotus PPO's kinetic activity and its adoption in the production of IQF process of Jian-lotus & its preservation, which contributes to lotus deep process and promotes its industrialization.1. Analysing major ingredients of lotus, evaluating its nutritious value and health protection properties and introducing the research condition of PPO and polyphenols.2. Measuring the content of polyphenols in Jian-lotus, studying its tissue orientation and assuring the optimum wavelength of measuring PPO's activitythat is 420 nm.3. Researching PPO's kinetic activity in Jian-lotus, drawing the conclusion that its optimum pH and temperature is respectively 6.8 and 40癈,its optimum reacted substrate is catechol and its Michaelis equation is4. By L9(34) researching on methods of Jian-lotus PPO's activity inhibitation, the result shows that the combination of 0.003%EDTA, 0.1 %citric acid and 0.1% ascorbic acid could enormously inhibit Jian-lotus's polyphenol oxidation.5. The result of PPO's activity of deepfrozen Jian-lotus in storage period ( -20 , one year), turns out that color-preservation treatment can effectively prohibit PPO's activity, decreasing Jian-lotus's degree of browning; while it assures excellent quality of deepfrozen Jian-lotus and enhancing its commercial value.
