Part One:Shanxi Overmature Vinegar has an overmature history and special, traditional process. It is one of the famous vinegar. With the development of technology, science and the requirement of high quality, it is necessary to exploit, optimize and regular. We are to analyze the community of microorganisms in the koji of Shanxi Overmature Vinegar, fermentation kinetics, fragrance components .In order to improve the process ,the quality and yield of Shanxi Overmature Vinegar ,and reduce the cost, the relationship between the change of functional microorganism community and the yield of metablic product was explored.Also,the relationship between the yield of metablic product and product quanlity was studied.lt is probably to improve the traditional technology by modern advanced technology.In this paper, qualitative and quantitative analysis of fragrance components in Shanxi Overmature Vinegar and other vinegars were analysed.through. Means, Regression, Classification analysis and a synthetic decision with fuzzy operation. It is found that the fragrance components between Shanxi Overmature Vinegar and other vinegars are of great difference, even between different grades of Shanxi Overmature Vinegar they also have many difference.That is to say that material and process in brewing between different producers are not completely the same.As a result, it is necessary to establish a process standard to put products in order.Part Two:Insulin-like growth factor(IGF) is a kind of multipotential regulatory factor existing in almost all of the tissues in the human body. Having insulin-like effect on all target tissues of insulin, the peptide can stimulate the synthesize of glycogen, lipid, protein and the metabolism of carbohydrate, inhibit the degradation of fat, promote cell proliferation and differentiation. IGF-I has wide biological effects. As a result it has been put in use to treat many diseases such as diabetes, osteoporosis, disease of neuromuscular and so on. Unfortunately, the quantity of IGF-I in blood is very limited, moreover it mainly exists in the form of complex between IGF-I and its BPs. Consequently, it is difficult to get IGF-I in large scale for the scientific research and clinic uses. Therefore it has become the focus of attention to produce enough IGF-I for use by using genetic engineering technique.In this experiment, a new engineering strain which can used to express IGF-I(Des1-3) with polyhistidine in c terminal is being constructed. The process of PCR and enzyme cutting were very successful, but failed in connection.
