Asparagus peel, the scrap of asparagus (Asparagus officinalis), rich in protein, free amino acid, minerals, vitamins, dietary fiber and flavonoid has the function of reducing the fat containing in blood, resisting fatigued and improving the memory of mice[1][2], so asparagus peel is a kind of functional material with high quality. To further exploit the asparagus peel, we studied the extraction and depuration process of flavonoid and dietary fiber in asparagus peel, as well as the factors that probably affect the process.Asparagus peel powder was extracted in ethanol, and the best extraction process was selected. The results shown that, the best process is extraction 2 hours at 60-65℃ using 80% ethanol, the ratio of the peel powder and the ethanol is 1 :25. The extraction purified through polyamide chromatographic column. The purity of the extraction and rutin content was determined by HPLC they are 54% and 13% respectively.High activity dietary fiber of asparagus peel was extracted and purified by enzyme method. The extraction volume is as high as 80.11%, include 16.41% soluble dietary and 63.7% insoluble one. The residue of protein, fat and starch in the fiber is 0.96%, 3.5% and 3.2% respectively. The water holding capacity (WHC) and the swelling capacity of the extracted fiber is 886% and 4.5ml/g, and higher than the standard value (400% and 4ml/g) in western country[3]. That is to say that the physiological activity of the dietary fiber in asparagus peel is very high.
