Peeling is an important annulet in potato processing, Methods of peeling which have been used at present all has their limitation. Along with the development of potato processing industry and the progress of our society and economy, it has become an urgent task for finding an efficient, economical and no pollution method of potato peeling.The paper majored in researching on steam peeling, based on the analysis and comparison of methods of potato peeling that have been used at present.Through mathematics and physics analysis, a mathematical model of temperature distribution inside potato when heated by steam was established, and a concept of firmness was also proposed. Through regression analysis, a function, which includes the relation between the firmness at any point and the heat flows at that point, was established, and also different heating time and the firmness at different points were calculated with the function. Furthermore, associating with the needs in practice, the effective parameters including 130 of steam temperature, 0.3Mpa of steam pressure and 120s of heat time were given. In the end, two structural principle excogitations of main machine were proposed.So that some valuable primary theory and practice bases for design of machinery and real application.
