The optimum parameters for cellulese on citrus peel and effect of extracts from citrus peel on antioxidant activities, scavenging nitrite and heavy metals ion-Pb2+, inhibiting nitrosamine synthesis were investigated systemly in this paper. These results of research were summed up as the follows:1 The optimum parameters were established thought the single factor experiments and orthogonal experiment .The result showed that the optimal conditions of cellulese on citrus peel was hydrolsis temperature at 50 ℃ , time for 12 h, pH=4.8, 1:50 ratio of substance to water, added cellulese 3 mg/ in per g citrus peel , oscillating frequency at 60 times per minute. Under this condition , the content of reducing sugar in orange peel and pemmelo peel was 23.63%,23.12% respectively ,moreover the content of cellulose can descended 69.90% ,39.03% respectively. 2.Scavenging effect on .OHThe scavenging effect on .OH was extracts from orange peel weaker than pemmelo peel.For the pemmelo peel , the scavenging effect on .OH was the extracts that were hydrolysis by cellulase weaker than were untreated. The IC50 of pemmelo peel treated and untreated were 3 .05 ul/ml and 0.98 ul/ml, respectively. For the orange peel ,the scavenging effect were hydrolysis by cellulase stronger untreated. The IC50 of orange peel treated and untreated were 2.05 mg/ml and 9.34 mg/ml, Except extracts form pemmelo peel treated , the ablitity of other extracts from citrus peel stronger than mannital( IC50=3.08mg/ml).β-carotene and rutin had the scavenging ablitity dramatically but P -carotene was stronger than rutin.The IC50 of P -carotene and rutin were 1.02×10-3 ug/ml and 1.42×10-2 ug/ml, respectively. Gluose was good scavenger too and the IC50 of it was 0.56mg/ml. For the ascorbic acid , there was no obvious scavenging ablitity in this experiments(density of reaction system 1 - 10 μg/ml).Combinating β-carotene with rutin, scavenging effect was the same almostly as β-carotene alone. The collaboration effect was poor.The scavenging effect of β-carotene combine with ascorbic acid and gluose decreasd slimly comparison with P -carotene alone.The scavenging ablitity has increased drastically when gluose combine with ascorbic acid., and they showed very strong collaboration effect which the scavenging ablitity a lmostly increased30 times .The IC50 of it decreased to 18.79mg/ml. Probability, in extracts from citrus peel ,itis that carotenoids, flovone .reducing sugar and ascorbic acid had important ingredients on scavenging effect on .OH.3 Scavenging effect on O2-The scavenging effect was extracts from pemmelo peel stronger than orange peel. After hydrolysising, the scavenging ablitity of extracrs of citrus peel increased,but weaker than ascorbic acid. The IC50 of extracrs of orange peel treated and untreated were 18.99mg /ml and 11.34mg /ml respectively.For the pemmelo peel, The IC50 of extracrs of orange peel treated and untreated were 13.64mg /ml and 8.82mg /ml respectively. Comparasion with unhydrolysis, the scavenging ablitity of extracrs of orange peel and pemmelo peel hydrolyses increased strongely.but it was weak ascorbic acid (IC50=0.72m g/m 1) .Rutin could hold back O2-- powerfully.The IC50 of it was 377.2ug/ml. The scavenging ablitity of Ascorbic acid was feeble(density of reaction system 1 -10μg/ml). Gluose and P -carotene hadn't the scavenging effect,whereas they could promote O2- generation. β-carotene combine with flovone showed Scavenging effect on O2' ~ and this scavenging ablitity increased comparasion with flovone alone.In low density, they showed certain collaboration but this collaboration was poor in high density. When gluose combine with P -carotene and ascorbic acid ,the promotion effect on O2- increased. Probability, it is that flovone was important ingredients on scavenging effect on O2- in extracts from citrus peel.4 Scavenging effect on H2O2The scavenging effect on H2O2 was extracts from pemmelo peel weaker than orange peel.
