Passionflower (Passionflora edulis) belongs to Passifloraceae family, is a tropical tree well known for its delicious fruit. It is commonly used to process the juice, or used on the taste strengthening for ameliorative and other juice because it has the special aroma moderate. There is a large area on Citrus in Hunan province. The work of this experiment started in November, 2001, which studies the formula and stability of the beverage which mixed of Passionflower and Batangas, Passionflower and Orange, Passionflower and Wenzhou orange.The main research results are as follows:1. Adopting the Orthogonal test is to find the best formulation and the stabilizer of the beverage mixing Passionflower with Citrus. Experiment result enunciation: Passionflower with Batanges formula is: The Passionflower juice 5%, The Batanges juice 15%, sugar 5%,stabilizer use CMC-Na(0.08%)+Xanthan Gum (0.05%). Passionflower with Orange formula is: The Passionflower juice 4%, The Orange juice 16%, sugar 5%, stabilizer use CMC-Na(0.08%)+Xanthan Gum (0.05%). Passionflower with Wenzhou Orange formula is: The Passionflower juice 5%, The Wenzhou Orange juice 15%, sugar 5%, stabilizer use CMC-Na(0.08%)+Xanthan Gum (0.05%), appropriate complement Vc.2. The result of stability showed: increase of the high pressure times can made the beverage stable, through high pressure all quality 5 times gets the even and consistent product, stabilize use CMC-Na(0.05%-0.08%)+Xanthan Gum (0.05%).3. The research to the disinfect type: 80C-90C/5min-10min. product 37 Cs educates a microorganism 0-1/ ml, educate a microorganism 0-60/ ml. the coli form cluster examintion result as the feminine gender whitout germ cluster.
