The dissertation focused on physiology and biochemistry of TP19 and fermentation of pyruvic acid in a 5L litre fermentor.The physioloyical and biochemical properties of TP19 yeast were investgated in detail. It has ability of risisting FP and 2-DG and enduring high NaCl concentration. It can assimilate (NH4)2SO4 as a sole nitrogen source for growing, but can't grow or grow well when there is only corbon source of pyravate. These indicate that TP19 is a well yeast for Pyruvate fermentation.And the fermentation of pyruvate in 5L liter fermentor was reseached.Four kinds of fed fermentation was compared .the result indicated that the output and proportion of pyruvate could be improved by 1.07% and 6.08% than that of fermentation in fed batch by using continued fed fermentation( when glucose concentration is high),but the time of fermentation is longer by 6h.The effects of three kinds of Oxygen supply manners on the fermentative production of pyruvate by Torulopsis GlabrateTP19 was investigated.Analysing concentration of pyruvate, glucose consumption rate, growth of yeast and concentration of ethanol of the fermentive process. As a result, 65.1g/L pyruvate, 58.6%pyruvate to Glucose and the productivityl.35(g.L-l.h-l) was achieved after fermentation for 48h in 5L bioreactor.
