[Background] At present, whether primary or advanced fruit and vegetable product are developing. The resources need using more efficient. These cause overstock, price falling and in efficient. The producters' initiative is hurted. The results of recent years studying show that the fruit and vegetable products not only supply kinds of nutrition which mankind needs but also bring us lots of necessary important things that protect people from the diseases caused by free radicals. In addition, antioxidants have been also developed to natural antioxidants. Because of latent toxicity and possibility of causing cancer, the synthetic antioxidants were repelled step by step, though they were used widespread before. The tendency is to find antioxidants with natural, efficiency, light toxicity in plants, it is also necessary for modern food, medicine and health. With the development of studying on natural products, reports about the antioxidant extraction from nature are increasing every year. At the same time, new problems appear, such as too many kinds of natural antioxidants whether good or not, advertisement overrun. Since all natural antioxidants are easily oxidized, polymerization, condensation in natural conditions, they would lose antioxidation and other bio-functions, then their applications are limited. So it is a new problem for our researchers that how to use our rare antioxidation resources more efficiently.[Objects] To study the technological parameters and andioxidation of the antioxidant pigments which extracted from tomato. To compare the capacities on scavenging oxygen free radicals of natural antioxidants. To study the therapeutic effect of the antioxidant which protected on rats with nephrotic syndrome.[ Methods ] Chemical extraction was applied to extract the antioxidant pigments from tomato. Chemiluminescence was used to research the scavenging capacities on O2 OH and H2O2 of tomato extraction and some natural plant antioxidants. Spray drying was applied to prepare microencapsulated catechin. 24 hrs urinary protein were detected by Commassie brillant blue. A semiquantitative scorewas used to evaluate the degree of glomerular and tubulointerstitium lesions.[Results]1 The optimum technological parameters which extracted antioxidant pigments from tomato in chemical extraction procedure were as follows: The radio of solid and liquid (acetone : ethyl acetate) was 1:5; the extraction time was 90 min in slow speed rabble.2 The IC50 of scavenging O2, OH and H2O2 for the extraction from tomato were 10.57 g/mL, 0.48 g/mL and 0.85 g/mL separately. The results showed that the capacities for scavenging three oxygen free radicals of it was OH.3 The results show that the antioxidants have the specificity in scavenging oxygen free radicals. The IC50 of scavenging O2 for catechin, the extraction from licorice, rosemary, grape seed, pulygonum cuspidatum and ginkgo leaf were separately 6.16 ug/mL, 42.13 ug/mL, 184.29 ug/mL, 15.86 ug/mL, 25.48 ng/mL and 33.47 ug/mL; The IC50 of scavenging OH were separately 0.59 ug/mL, 5.59 ug/mL, 39.89 ng/mL, 2.93 ug/mL, 7.15 ug/mL and 10.44 ug/mL; The IC50 of scavenging H2O2 were separately 0.69 ug/mL, 24.02 ug/mL, 16.80 ug/mL, 1.34 ng/mL, 27.27 ug/mL and 6.09 ug/mL. It was the strongest that the capacities on scavenging three oxygen free radicals of catechin.4> The optimum technological parameters which prepared microencapsulation of catechin in spray drying were as follows: The concentration of slurry was 25%; the radio of sodium catechins and wall material was 6:4; the radio of emulsifying agent A and emulsifying agent B was 8:2; the inlet temperature and the outlet temperature were 130C and 95C, respectively.5 Scanning electron microscope (SEM) was applied to study the microstructure of microcapsules. The results showed that microencapsulated catechins were regular small spherical pellets (30~ 150 um in diameter) , which their surfaces were smooth and intact, not crack, but slightly the concave mark, and the wall structure showing the pre-pressing whole struct...
