Near infrared transmittance spectroscopy is able to predict the amylose and protein content of rice simply,quickly and relatively correctly. Such information is useful in rice quality analysis. For a breeder , such information can be used to breed rice. For processing enterprises, such information can be used to supervise quality , analyse quality and measure rice in commerce. In the study , in addition to amylose and protein of single grain, experiments were conducted to further investigate its applicability to the prediction of amylose and protein contents of batch rice. Each mathematics method of spectrum was acquired through calibration optimization for analyzing amylose and protein of milled rice. Due to paddy samples having the difference of thick rigidity shell and very much breed variety,granularity,seed capsule character,seed grain,when application of Near Infrared Transmittance Spectroscopy (NITS) to analyze paddy samples different samples were provided with different model.Before using NITS to prediction amylose the study used FLOW INJECTION ANALYZER to determine amylose contents in rice. The method can reduce error of tranfering solution and the result is not different compared with iodine colorimetry. Ammonium sulfate was used to validate the stability of the KJELTEC ANALYZER.After the equations of amylose and protein in batch rice were established , the equations were validated by other samples and compared with the sample study . The result showed the equations were succeed. Compared the equation of amylose with the equation of protein ,the prediction of protein was better than amylose in brown rice. The prediction of amylose in brown rice was not better than the prediction amylose in milled rice. Because the repeat of result is not better to use ground brown rice to determine amylose. Therefore,NITS offers a possibility of analysis to amylose and protein conteins of paddy,brown rice,milled rice. Continued work is still needed to update the regressions.
