The shortage of fruit storage capacity influenced apple production in our country.In this paper, compressive properties of Fuji apples during harvest and storage day were discussed based on the analysis of physiological character. In the study of Fuji apples in harvest period, compressive property and sugar content of apples on different locations in trees were tested, and the relationship between compressive properties and sugar content was studied, so the paper can provide evidence to select the harvest day for Fuji apple. In the study on the compressive properties of Fuji apples in the storage period, apples' compressive property, sugar content, acidity and water were studied, the relationships of compressive property and sugar content, as well as acidity and water were investigated. Through the regression analysis of test results, regress equation was put forward. The paper assessed Fuji apples' storage character in quality, established the rheological model of compression, and analyzed economic benefit during storage and sale day. According as the forgoing results, farmer can select a appropriate storage method.Results showed:1. The mass and density increased with the apple harvest degree before harvest day;2. For apples on different location in a same tree, the turn of maturity was: sunny outer side of the crown, sunny inner and shady outer side, shady inner side;3. During storage period, compressive property, acidity, water decreased; sugar content increased, then decreased;4. Cellar can meet storage demand of Fuji apples for a short time.
